Estrellita was never built by Chef Walt and me alone. This is another moment that proves just that.
After nearly two years of work alongside Sarah Hawk .j.hawk and her legal team, we are honored to welcome Chef Din Carlo “Chef C” our new Executive Sous Chef to Estrellita. Together, we believed his talent, discipline, and deep understanding of Filipino cuisine deserved an international stage.
Our petition and his O-1 Visa approval are more than professional achievements. It was bayanihan brought to life by a collective act of faith, advocacy, and cultural preservation. Chef C’s placement in the ranks of our operation along with his talent, community mentorship and education were affirmed by pillars of the community in PI and the U.S, including Queen of the Filipino Food Movement Nicole Ponseca , Honorary Consul General Ray Donato , esteemed Journalist Lenn Almaden-Thornhill , Professor Dr. Rob Helfenbein , Travel Journalist and creative event planner and marketing company Sean O’Keefe , and many others who reminded us that the task of pioneering an entire culture and cuisine cannot be carried alone. Thank you so much for your consideration and contribution to our growth! An O-1 Visa isn’t issued because people like you. It’s approved because the talent, hard work, discipline and skill speaks too loudly for the U.S. Immigration Department to deny.
Maraming salamat to everyone who believed in this vision. A very special thank you to Tita Chica Zwei’s mom and our dear friend, whose guidance and connection helped make this possible. This milestone not only becomes a catalyst for Chef Din Carlo’s culinary journey, but also strengthens Estrellita’s mission to honor classic, heritage cooking and allows us to continue being a beacon for Filipino culture and cuisine throughout the American South and beyond.
