NOW ROASTING!

🇪🇹 Ethiopia Ardent Konga G1: Classic Natural
From the highlands of Gedeo, Yirgacheffe, comes an expressive Ethiopian coffee produced from traditional Ethiopian landrace varieties and processed as a classic natural.

This lot comes to us through Ardent Coffee Export, founded by Ashenafi Argaw, a specialty coffee exporter deeply rooted in Ethiopia. Ardent works closely with coffee-growing communities across Ethiopia, with a focus on quality, traceability, and building long-term relationships at origin.

In the cup we taste: Strawberry, Pineapple, Hibiscus, Graham Cracker 🍓🍍🌺🍪

A vibrant and fruit-forward natural with juicy strawberry and pineapple character, floral hibiscus aromatics, and a sweet graham cracker finish.

Roasted for filter.

So, how do we approach roasting a coffee we’ve never worked with before? ☕

Whenever we get a new coffee, it’s always exciting, but it can also be a little daunting, especially when we’re developing it for filter.

So how do we make an informed first roast?

We start with our green coffee analyzer, which gives us useful information like moisture content and density. This gives us a good baseline to work with. We then combine that with information from our importer, such as the coffee’s country of origin, elevation, and processing method.

From there, we look at coffees we’ve roasted in the past. If we’ve worked with something similar before, we can use its roast profile as a starting point and make adjustments from there. It saves us from completely starting from scratch and gives us a pretty good idea of where to begin.

Of course, coffee roasting isn’t an exact science. There’s a lot happening inside the roasting chamber, and it’s almost impossible to know exactly what chemical reactions are taking place at any given moment. But that’s part of what makes roasting fun. 😄

The data gives us a direction, the roast gives us information, and the cup ultimately tells us whether we got it right.

We’re definitely happy to have a few gizmos around the roastery to help us along the way. Hopefully, we can invest in more equipment in the future and learn even more about the coffees we roast.

More tools, more learning, better coffee.

But that’s probably a topic for another day. 😉

Oh, and we are releasing this new Ardent Konga Natural from Ethiopia soon! Stay tuned for that. Cheers! ☕

Please pardon our appearance while we make some space for something even better!

For those wondering about our fish friends, don't worry! All our koi have been safely moved to a secure, comfortable new location. The old pond was getting harder to maintain, so we decided to reimagine the area entirely.

⚠️ A quick safety note for visitors: If you are dropping by while we are under construction, please keep a close eye on your little ones and be extra careful of your footing near the renovation zone to make sure everyone stays safe.

Thanks for understanding! 🫡

At Arabigo, we're not just known for our coffee. Our chicken wings have earned quite a following too.

We use fresh, locally sourced chicken wings, coated in a light, crispy breading and fried fresh to order.

Pictured here is one of our signature flavors: Salted Egg. It took us nearly two months and several rounds of testing to get it just right, and we're proud of the result.
