This week, we’re getting to know our Restaurant Manager, Tiaa, the person who keeps the team moving and helps bring The Bunker experience to life.
From the floor to everything happening behind the scenes, Tiaa is across a little bit of everything: the restaurant, events, reservations, the team, and all the organised chaos that comes with hospitality.
Having started in hospitality at just 13, Tiaa has spent the past 17 years working across both front and back of house before finding her way into management. What keeps her loving it? The people, the stories, the pace and the fact that no two days are ever quite the same.
For Tiaa, The Bunker is all about the experience. From a fine dining dinner downstairs to cocktails upstairs at 4am. A hidden little rabbit hole where dinner can turn into one more cocktail… and suddenly you’re leaving several hours later.
Her Bunker favourites? Oysters, duck parfait and risotto. For drinks, it depends entirely on the day. Although after a busy shift, there’s a clear favourite: a shot or two of Jameson, followed by a filthy vodka martini.
And after a big week surrounded by people, Tiaa is just as happy disappearing somewhere peaceful. Although living in Queenstown makes that pretty easy, with scenery that still manages to stop her in her tracks.
We’re lucky to have Tiaa at the heart of The Bunker.
