KARENGERA 817 • RWANDA

Nyamasheke, Rwanda

Cherry · Cola · Mulled W**e

Red Bourbon · Washed

Produced by eleven smallholder farmers in Nyamasheke, Rwanda, this Red Bourbon is processed at Karengera washing station. Cherries are hand sorted and floated before being depulped within eight hours of harvest. The coffee then undergoes 15–18 hours of dry fermentation, followed by washing and a 15–20 hour soak. Finally, it is slowly dried on raised beds for 12–14 days, producing a sweet, fruit-forward cup with notes of cherry, cola and mulled w**e.

Pink Bourbon · Advanced Natural

Produced by Oscar Hernández at Nogales in Pitalito, Huila, this Pink Bourbon undergoes an advanced natural process. Selectively harvested cherries are heated to 60°C before a thermal shock, followed by controlled fermentation with the addition of coffee cherry juice. The coffee is then slowly dried and stabilised, producing an intensely fruit-forward cup with layers of sweet berries and milk chocolate.

What makes us choose a coffee?

We roast and cup a lot of great samples - a lot more than we buy.

Clarity, sweetness and balance matter. But ultimately, we want to keep drinking it.

If we finish the cup and want another one, that’s usually a pretty good sign.

THE CUPPING TABLE.

This is how we decide what coffee makes it into the box.
