Every great Dum Biryani begins with patience.

We start by marinating tender meat with aromatic spices and creamy yogurt, allowing every flavour to develop. Fragrant basmati rice is cooked separately until perfectly tender, then carefully layered with the marinated meat, fresh herbs, saffron-infused milk, and a touch of ghee.

The pot is sealed with dough and slow-cooked using the traditional dum method. This traps the steam inside, allowing the flavours to blend naturally while keeping the meat tender and every grain of rice beautifully aromatic.
