This month we have a stunning dessert which really shout ‘Summer’

This is our Strawberry Pavlova

A soft gooey centred meringue shell, crème Chantilly, and we have juiced the strawberries into a gel and dressed them with a little Marigold.

Our shellfish dish is a Dorset Crab Chawanmushi

A gently steamed brown crab custard. Topped other the fresh dressed white crab meat, yuzu & seaweed mayonnaise. Then finished with Marigold petals and langoustine bisque.

From today we have a new layout for our menus.

We wanted to continue the story of ‘The Counter’ on our journey from being good to becoming great!

There will still be adjustments month to month but our desire is the elevate our offering and Robin wants to put more time into the creation of the dishes, and making the guest experience as amazing as we can.

We’re celebrating some stunning Italian produce this month.
Winter tomatoes are just a little bit more sharp which pairs well with our Hand dived Orkney Scallops. We lightly dehydrate the tomatoes, make reduced very punchy and rich tomato fondue from the trim and a lighter gel from the juice and the seeds. Finished with fresh oregano and olive oil.
