It’s Fair Trade Fortnight, and we’ve got something extra special coming fresh out of the ovens this week. 🍌🍫
​We’re serving up our banana bread made with Fairtrade chocolate and sweet, Fairtrade organic bananas—kindly supplied by the lovely team at Inverness Fairtrade Group .
​Baking from scratch is about more than just great flavour. It’s a daily reminder of where our food really comes from, and how crucial it is that growers and producers get a fair price and respect for their hard work.

As if by pure magic overnight, a brand-new kitchen appeared at XOKO. 🪄✨

​A band of Black Isle fairies teamed up with our legendary Invernessian sparky, waved their wands, and completely transformed the space in the blink of an eye.

​With that fairy dust settled, it officially marks the end of an era: our baking production has packed up its whisks, noisy dough mixer, and moved out of Bridge Street, well just upstairs.

​For 5 years, watching our bakers hand-laminate pastries, shape loaves, and pull fresh bakes straight from the ovens right before your eyes was the beating heart of XOKO. Saying goodbye to that cosy, flour-dusted little theatre where you watched every step brings real tears to our eyes.

​At the same time, we couldn't be more thrilled for what comes next. The baking crew is settling into brand-new premises, unlocking what they’ve needed most:

​Ideal working conditions: Proper space to stretch out, stable climate control, and kit that lets our bakers focus purely on quality and craft.
​Greater freedom: Bench space to finally develop new product ideas and special bakes we never had the room to make before.

​Moving an entire bakery and kitchen overnight is a massive undertaking. There will inevitably be a few hiccups and bumps along the road as we find our feet, learn the new equipment, and dial in the space. We ask for a wee bit of patience over the coming weeks while we settle in, but we cannot wait for you to experience what's ahead.

​And that open-baking view isn't gone. While the new spot above isn't quite ready to welcome you all just yet, once the doors do open you’ll be able to watch all the pastry magic happen live—even more up close than before.
