Three coffees. Three completely different expressions of Yunnan, and Dave is really excited to roast them up!
Moon Bear is the brightest and most delicate of the lineup. Processed using the Honey Method, it delivers lively notes of berries, orange, tangerine, and black tea. Expect crisp citrus acidity, gentle fruit sweetness, and a clean tea-like finish that becomes even more pronounced as the cup cools. If you enjoy clarity, brightness, and elegant complexity, Moon Bear is your coffee.
Orange Cat 1.0 offers a softer, more approachable experience. Produced using a Yellow Honey Process, it features notes of yellow sugar, wax apple, and green tea. The cup is smooth, sweet, and balanced with a light, refreshing fruit character and a clean finish. Think of it as the easiest-drinking coffee of the three—subtle, refined, and wonderfully approachable.
Triple Fermentation is the boldest and most adventurous coffee in the collection. Through multiple rounds of anaerobic fermentation, it develops intense notes of red wine, spice, and guava. Rich fruit sweetness, a full body, and layered complexity make this a coffee that continually evolves as it cools. If you're a fan of experimental processing and expressive fruit-forward coffees, this one is for you.
All three coffees come from Chily Estate in Yunnan, China, where high elevations, dramatic temperature swings, and meticulous processing are helping produce some of the most exciting coffees in the world today.
