Looking for a cheese that is different, not often in stock (first time actually), quite unique? We just received two squares of Taleggio Masaccio DOP. Very rustic and yes, smelly.
Core Taste
Sweetness: This Taleggio leans toward the dolce side of the spectrum. It’s not sugary—rather, it has a gentle, milky sweetness that softens the edges of the rind’s funk.
Light Aromatic Notes: “Leggermente aromatico” suggests subtle hints of yeast, cultured cream, and a touch of cellar aroma, but nothing sharp or aggressive.
Texture Influence
Because it’s aged over 60 days and described as very soft and creamy, the texture plays a huge role in the flavor: :
The paste melts quickly on the palate, releasing flavor fast.
The creaminess rounds out any tang or funk, making it more approachable than stronger washed‑rind cheeses.
Aroma
Expect a mild washed‑rind aroma—earthy, slightly mushroomy, but not pungent.
Compared to classic Taleggio, Masaccio seems intentionally gentler and more refined.
