UMAMI staat voor de vijfde smaak, naast zout, zuur, zoet en bitter. Het is zowel hartig maar het staat ook voor het zilte dat je terugvindt in zeewier, garnalen of sojasaus. De kaart van UMAMI werd opgesteld uit goede en kwaliteitsvolle producten. Kwaliteit en innovatie primeren. Sushi, tempura, dimsum gerechten of Wagyu van de Japanse houtskoolgril (Robata) is nog maar een korte samenvatting van het gevarieerde premium aanbod op de kaart. Inspiratie werd opgedaan in wereldsteden London en New York waar restaurants zoals Nobu, Zuma, Hakkasan of Spice Market een gastronomische, Aziatische keuken aanbieden die verder gaat dan wok of gebakken noedels. De inrichting van UMAMI wordt gezellig, maar eenvoudig. Aziatische elementen werden gecombineerd met moderne details. De muren van het 19e eeuwse pakhuis werden volledig gestript zodat de plafonds en de houtenstructuur weer zichtbaar werden. Het geheel lijkt eclectisch omdat aan de koele pre-industriële look een Aziatische touch werd gegeven. De gedroogde lianen uit Bali en de oude vloer uit een steenbakkerij van Engeland zijn originele details. De Graypants lampen zorgen voor een zeer eigentijdse toets. Deze Australische lampenkappen zijn gemaakt uit gerecycleerd karton. Natuurlijke elementen en kleuren voeren de boventoon. Er is een nieuwe open keuken op het gelijkvloers. Recentelijk werd ook heel de cocktailruitme aangepakt en voorzien van een nieuw interieur door de hand van Monique Stam. UMAMI
