Compassion Should Reach the Conversation Too

Something I’ve been sitting with lately.

When we talk about plant-based food, vegan food, animal welfare, health, or conscious living, the word compassion often sits at the centre.

Compassion for animals.
Compassion for the earth.
Compassion for future generations.
Compassion for the body.

And all of that matters deeply.

But I also wonder sometimes:

Can that compassion reach the conversation too?

Because online spaces can become very harsh, very quickly.

A person can be trying to share food, ideas, recipes, learning, small business work, market offerings, or their own evolving way of living β€” and instead of curiosity, they are met with ridicule, shame, assumptions or attack.

That feels worth gently questioning.

At Taste Without Borders, our food is plant-based.
Our recipes are real.
Our ingredients are real.
Our workshops are real.
Our choices come from care, learning, lived experience and a desire to create food that nourishes.

Yes, I sometimes use AI tools to help shape words, images or presentation.

But the ideas, the recipes, the values, the food, the cooking, the testing, the learning, the market work and the intention are ours.

AI is a tool.

It does not replace the hands in the kitchen.
It does not replace the ingredients.
It does not replace the care.
It does not replace the person behind the work.

And I understand that not everyone likes AI imagery or AI-supported writing. That is okay. It is a real conversation, and people are allowed to have strong feelings about it.

But disagreement does not need to become cruelty.

Questions can be asked with respect.
Concerns can be shared without shaming.
Different choices can be discussed without tearing someone down.

Because if compassion is part of the reason we choose plant-based food, then perhaps compassion also belongs in the way we speak to each other.

We can care deeply about animals and still remember to be kind to humans.

We can question tools and still respect the person using them.

We can disagree without forgetting someone’s dignity.

That is the kind of food culture I want to be part of.

One where care does not stop at the plate.

So… What Do You Actually Eat?

When someone finds out I’m plant-based, one of the first questions is usually:

β€œWhere do you get your protein?”

And somewhere underneath that question, there’s often another one:

β€œSo what do you eat… lettuce?”

Fair question.

So I thought I’d show you.

This was our breakfast yesterday: a plant-based burger made with real, wholefood ingredientsβ€”nourishing, filling, full of flavour, and definitely not just lettuce.

πŸ” The bun was made from lentils and millet.

🌱 The patty was made with black beans, walnuts, leek, onion, garlic, paprika, and Celtic salt.

πŸ§„ The garlic aioli was made from tofu, garlic, Celtic salt, lemon juice, and olive oil.

Then we added avocado, lettuce, and tomato.

Simple ingredients.
Real food.
Plenty of protein.
Plenty of flavour.
Plenty of satisfaction.

I often think of creating a recipe like building a house.

You start with good foundations. In food, that might be lentils, millet, black beans, walnuts, tofu, seeds, vegetables, or whole grainsβ€”ingredients that bring substance, protein, minerals, fibre, and body.

Then you build the structure.

That’s where texture comes in: the patty, the bun, the crunch, the creaminess, the softness, and the bite.

Then come the warmth and character.

Onion, leek, garlic, paprika, herbs, spices, Celtic salt, lemon, and olive oil begin to create the flavour profile.

Finally, you add the finishing details:

A creamy garlic aioli.
Fresh tomato.
Avocado.
Lettuce.
A little brightness.
A little freshness.
Something juicy.
Something rich.
Something alive.

That’s how a recipe becomes more than a list of ingredients.

It becomes a meal with foundations, structure, flavour, nourishment, and satisfaction.

This is one of the reasons I call myself plant-based, rather than simply vegan.

For me, plant-based is not only about what I leave out.
It’s about what I build with:

🌱 Seeds
🌱 Vegetables
🌱 Whole grains
🌱 Herbs and spices
🌱 Healthy fats
🌱 Beautiful sauces
🌱 Texture, colour, and flavour

At Taste Without Borders, we don’t see plant-based food as restriction.

We see it as creativity.

A plate can be generous without meat.
A burger can be satisfying without dairy.
A breakfast can be hearty without eggs or bacon.
Protein can come from plants.
Flavour can come from care.

🌿 Why We Choose Sweetness With Care 🌿
We still love sweetness.

A beautiful dessert. A warm carob treat. A spoonful of berry cream. A little caramel filling made from dates. A shared plate at the market.

Sweetness has its place. ✨

But at Taste Without Borders, we are very intentional about the kind of sweetness we use. We don’t choose sweeteners just because they make something taste sweet. We choose them by asking deeper questions:

❓ Where did this sweetness come from?
❓ How close is it to food?
❓ How processed is it?
❓ How does it sit in the body?
❓ Does it bring anything with it β€” fibre, minerals, flavour, texture, depth?
❓ Or is it simply sweetness stripped away from everything else?

For us, refined sugar-free is not about taking joy out of food β€” it is about bringing relationship back into food. πŸ’›

Sweetness the Body Can Recognise
When sweetness comes through whole foods, it arrives differently.

🌴 Dates bring fibre, texture, and depth.
πŸ“ Fruit brings water, color, and natural balance.

These are still sweeteners, and they still ask for balance. But they feel very different from building food around refined white sugar or artificial sweetness.

Why We Choose What We Use
Dates: One of our absolute favorites. They are a whole food bringing natural sweetness, fibre, minerals, and caramel-like depth to our carob treats, slices, and bliss balls. They do more than sweeten β€” they build texture and feel like real food.

Coconut Nectar: Earthy, warm, and soft. It brings deep flavour, not just sweetness, and sits beautifully alongside carob, nuts, and seeds.

Pure Maple Syrup: Simple, traditional, and full of distinct flavour. We use it where a lighter sweetness is needed in creams, sauces, and breakfast bowls.

Monk Fruit: Useful when we need sweetness without adding sugar or heavy syrups, with little to no glycaemic impact.

What We Are Really Choosing
For us, it is never just about swapping one sweetener for another β€” it’s about the whole recipe. We look at sweetness alongside:

πŸ₯£ BONUS RECIPE: Warm Chia Breakfast Pudding πŸ₯£
This is a simple, creamy, grounding breakfast pudding made with gentle wholefood sweetnessβ€”easy to adapt with whatever seasonal fruit you have on hand!

Ingredients:
1 can coconut cream

400 ml filtered water

4–5 tbsp chia seeds (4 tbsp for a softer pudding, 5 tbsp for thicker)

2 tbsp cinnamon powder

2 tbsp maple syrup (or coconut nectar)

Fresh fruit of choice, to serve

Method:
Place the coconut cream, filtered water, chia seeds, cinnamon, and maple syrup into a pot.

Whisk well until everything begins to come together.

Place over low heat. Keep stirring gently as the chia seeds swell and the pudding thickens.

Warm until it reaches your desired temperature and texture. (If it gets too thick, just add a splash more filtered water).

Spoon into bowls, top with your favourite seasonal fruit, and enjoy warm!

How Food Affects Your Mood

Your brain is not separate from your body.

Every bite you take sends signals through your nervous system, affecting how you think, feel, and respond to the world.

Yet most of us have been taught to ignore this connection β€” to push through mood struggles with willpower alone, unaware that what's on our plate is speaking directly to our mind.

The Truth About What We Consume:

What we eat either supports clarity, calm, and resilience β€” or it clouds the mind, destabilizes mood, and feeds anxiety and depression.

What We Avoid β€” And Why:

Caffeine as a Neurotoxin

Caffeine overstimulates the nervous system, triggering anxiety, restlessness, and disrupted sleep. It keeps your system in a state of alert that prevents genuine rest and healing.

Alcohol: The Depressant

Alcohol damages the gut lining, disrupts the microbiome, inflames the brain, and is literally a depressant β€” it suppresses the nervous system and feeds anxiety, depression, and emotional instability.

Refined Sugars: The Mood Roller Coaster

Here's what most people don't realize: even when you're choosing what SEEMS like healthy food, conventional produce is often coated with neurotoxic chemicals.

Glyphosate (Roundup) is sprayed on conventional grains, legumes, and vegetables to kill weeds. It doesn't just sit on the surface β€” it's absorbed into the plant and remains in the final food you eat. Glyphosate crosses the blood-brain barrier and disrupts neurotransmitter function, contributing to anxiety, depression, and mood disorders.

Pesticides and fungicides designed to kill living organisms also affect human neurology. They're neurotoxins β€” literally designed to disrupt nervous systems. When you consume them, your brain pays the price.

Making Real Substitutes β€” Why We Choose Differently

When you transition to plant-based, organic, whole-food eating, the first question is usually: "But what do I use instead?"

It's a great question. But here's what we've discovered: not all substitutes are created equal. Some popular "health" alternatives are actually problematic.

So we've learned to dig deeper. To question. To find what truly works.

Here's what we DON'T use β€” and why:

OATS: Mold Contamination

Commercial oats are routinely contaminated with mold, especially during storage. Even "certified gluten-free" oats can contain mycotoxins that trigger inflammation.

What we use instead:
Buckwheat, millet, or quinoa β€” nutritious, mold-resistant grains that nourish without the hidden contamination.

AQUAFABA: Lectin Content

Aquafaba (the liquid from canned chickpeas) contains lectins β€” compounds that trigger inflammation and gut irritation in many people.

What we use instead:
Fresh banana, applesauce, or silken tofu β€” real foods that bind beautifully without inflammatory compounds. One ripe banana replaces one egg in most baking. Silken tofu creates creamy textures in mousses and custards.

TAPIOCA FLOUR: Over-Processing

Tapioca flour is so heavily processed and refined that it offers little nutritional value and spikes blood sugar dramatically. It's essentially empty starch.

What we use instead:
Buckwheat flour, almond flour, or rice flour β€” whole foods with actual nutrition. Buckwheat creates earthy, satisfying textures. Almond flour adds richness. Rice flour works beautifully for delicate applications.

STEVIA: Birth Control Properties

Stevia has been documented to have contraceptive properties. Whether intentional or not, it's not something we want in our bodies regularly.

What we use instead:
Coconut nectar or dates β€” whole food sweeteners with minerals and nutrients. Coconut nectar has a low glycemic index. Dates provide fiber and natural sweetness while binding beautifully in desserts.

TAHINI: Mold Contamination

Like many seeds and nuts stored commercially, tahini is susceptible to mold and mycotoxin contamination. The storage and processing methods create ideal conditions for fungal growth.

What we use instead:
Fresh-ground or homemade nut butters β€” make them yourself from raw nuts, or source from trusted suppliers who grind fresh. Sunflower seed butter is another beautiful option. Freshly made, they're creamy, nutritious, and mold-free.

STORE-BOUGHT NUT BUTTERS: Rancidity

Commercial nut butters sit on shelves for months. Nuts contain oils that oxidize and go rancid over time, creating inflammation in the body.

What we use instead:
Freshly ground nut butters β€” buy raw nuts and grind them yourself in a food processor, or find local suppliers who grind fresh daily. The difference is remarkable. Fresh nut butter should smell sweet and nutty, never musty or off.

Why This Matters

Plant-based eating isn't about swapping one processed product for another. It's about returning to real foods.

Foods your body recognises.
Foods without hidden contamination.
Foods that nourish instead of inflame.

When we make our breads, desserts, dips, and meals at Taste Without Borders, we're not looking for trendy substitutes. We're looking for ingredients that genuinely support your health.

A Final Word: Why Organic Matters

You'll often hear the term "spray-free." It sounds reassuring. But here's what it actually means: the PLANTS weren't sprayed.

The weeds? Different story.

Commercial farmers often use glyphosate (Roundup) to kill weeds BEFORE planting, or between crops. The chemical residues remain in the soil and are absorbed by the growing plants. "Spray-free" doesn't mean glyphosate-free.

Organic certification is different. It means:

No synthetic pesticides
No glyphosate pre-treatment
Soil management that builds health, not chemical dependency
Real accountability

Shop organic when you can. Or better yet β€” shop with your trusted local farmers market vendors.

Know the hands that grew your food. Know the practices. Ask questions. Build relationships.

This is how you truly know what you're eating.
