The best dinners are rarely complicated.

Something seasonal on the plate, something good in the glass, and someone across from you who makes the room feel smaller.

At Bottarga, there is always a seat with your name on it.

198 Bay St, Brighton VIC 3186.

Think Champagne is the only sparkling worth drinking? Think again 🍾

These 3 bottles use the same traditional method as Champagne but come from Italy, England, and Tasmania… often with better value and just as much craftsmanship.

✨ Franciacorta from Italy
✨ Blanc de Blancs from England
✨ Tasmania’s own Vintage Cuvée

Same method. Different regions. Serious quality.

Not all great sparkling wine comes from Champagne.

Franciacorta, from Lombardy in northern Italy, is made using the same traditional method as Champagne - secondary fermentation in bottle, time on lees, and careful craftsmanship but with its own Italian identity.

Often more textural, generous, and quietly elegant, Franciacorta remains one of the world’s most underrated sparkling wines.

A reminder that “traditional method” is not exclusive to Champagne - only the region is.

Our cocktail and mocktail program follows the rhythm of the kitchen.

We take inspiration from native Australian ingredients and use what Federico and the team are already working with to create drinks that feel connected to the menu.

Simple, delicious, and made with purpose — whether you are starting the night or pairing something alongside your meal.

Hospitality is already difficult enough.

Small businesses, guests, suppliers, staff, and the wider community need to understand each other better - not be pushed into outrage by headlines

This conversation should not be about turning guests against restaurants, or restaurants against guests.

We are not asking everyone to agree with us.

But we are asking for fairness, context, and respect.

For the small independent restaurants trying to keep their doors open, for the staff who work long nights, and for the guests who genuinely value what hospitality brings to a community - we need more understanding, not more division.

Chinese wine might not be the first thing that comes to mind — but this is exactly why it’s worth paying attention.

From Xinjiang, a region with extreme conditions and huge day–night temperature shifts, this Beichun has deep colour, bright acidity, earthy complexity, and a power that almost feels Amarone-like.

China’s wine scene is still young, but it’s moving fast — and bottles like this show just how much potential is there.

Would you try a Chinese wine?

Sweet or dry?
Most of the time, the answer is already on the label.

A quick look at the alcohol percentage can tell you more than you think — especially with white wines.

Lower alcohol usually means more residual sugar left in the wine.
Higher alcohol usually means the wine fermented dry.

Simple trick. Big difference.

How many people actually know this? 🍷
