Cake texture is affected by a lot of factors
1. Temperature of ingredients
Room-temperature items blend smoothly, while cold components can trap less air and yield a dense texture.
2. Over mixing
Develops too much gluten, turning a fluffy batter into a heavy, rubbery cake
3. Oven temperature
A hot oven burns the edges or sinks the center, while a cool oven causes poor rising and leaving the cake in the oven for too long dries out the cake
4. Cooling
Letting a cake cool completely lets steam re-condense into the crumb for peak moisture
