The most beautiful wedding for Jason and Jeanette held at the stunning Clearwater Farm Venue | KZN Wedding Venue (Port Edward). It was full of french country feels and colorful floral vibes.

The guests had a ‘flower bar’ where they all got to make their own mini vases from the most beautiful array of flowers, and besides the candles on the table, that WAS the table decor. Just wow!

Onto the food : We did floating canapés as starters and as usual I did a bride and groom box to make sure they don’t miss out whilst having photos!

Main course : 3 different options (Lamb / Chicken / vegetarian ) which was preordered. I loved watching just the plates on the table when playing back a plating video… it brings some peace to a (organized) chaos. It shows the energy and work that goes into creating them.

And wait until you see the Dessert : a macaron tower! This was the first one I had actually made and I loved every minute of it! (Macarons not made by me… we are not friends). It was the perfect way to end the happy couples meal, served along side the cake 💕

Floating canapés are great for a ‘casual’ (as in not a formal, sit down) event. Where there are guests going to be gathered around the bar or some cocktail tables, maybe on couches with coffee tables nearby.

My client last weekend said ‘when the food is good, everyone is happy. So thank you. Now, we just need to win the rugby!’ — we all know what happens then! 🤦🏼‍♀️Luckily we did!

1. Cacio D’ Pepe croquettes topped with Proscuitto and 12 month aged Grana Padano

2. Seared Tuna Pops with Miso Mayo and Avo Wasabi Puree

3. Port and Apple Glazed Pork Belly with Black Garlic Potato Puree

4. Butter grilled Crayfish topped with Citrus Hollandaise

5. 5 spiced Duck ‘Tacos’ with Apple Cucumber Salsa, pickled Cabbage and Lime Mayo served with an Apple Margarita shot with Cinnamon Sugar rim

6. Panko Prawns with Saffron Lemon Mayo

7. Haloumi ‘chips’ with Pink Peppercorn and Garlic Yoghurt with Mint and Pomegranate

8. Butter Chicken Bunny Chows with Raita and a Pineapple and Coriander Salsa

9. Truffle and Mature Cheddar toasties with Truffle Carpaccio and Gold Leaf

FLOATING CANAPÉS are most definitely pricier than ordering platters. WHY? To start, we spend hours, sometimes days sourcing ingredients and preparing the food, as we do for any event’s food. Then on the day, myself and my staff head to your event and stay 3-4 hours (depending on the amount of food) to warm, prepare and garnish each of the canapés. We clear the almost finished or finished trays as we go and replace with new.

This can be easily be 300 - 400 pieces of food for on event. We then do a full clean of your kitchen so that it looks like we weren’t even there. Only your full tummy to remind you.

We then head back and unpack everything. And then head to our respective homes. This is normally too late for taxis so my staff get ubered home most night events. The next day, the cleaning and sorting of equipment happens.

So yes, it is more expensive, but very worth it (so we say ourselves!)

Nibbles served at a refreshment break for the Circular Energy NPC AGM held at the brand new Club Med South Africa … super simple snackies but I was very excited to get a sneak peak of the premises! So thought it’s worth a share!

-> Biltong, Fruit and Nut boxes with mini Cupcakes and Banana Tahini muffins

I WISH I got to see more of the resort but you know… places to be, people to feed (and I think I might have been kicked out for trespassing)
