The secret to great French fries is not just one thing it’s a combination of the right potato, the right preparation, and the right cooking method.

First, the potato matters. Starchy potatoes like Russets are best because they have less moisture and more starch. This helps fries become fluffy on the inside and crispy on the outside. Waxy potatoes, like red or new potatoes, hold too much water and don’t crisp as well.

Second, preparation is key. After cutting the potatoes into sticks, soaking them in cold water for at least 30 minutes removes extra surface starch. This step prevents fries from sticking together and helps them crisp better. After soaking, the potatoes must be dried very well water and hot oil do not mix, and wet fries will steam instead of fry.

Third, the cooking method makes a big difference. The best fries are usually cooked twice. The first fry is at a lower temperature to cook the inside until soft. Then the fries rest for a few minutes. The second fry is at a higher temperature, which makes the outside golden and crunchy.

Finally, seasoning should happen right away. Salt sticks best when fries are hot and fresh from the oil. Some people also add spices like paprika, garlic powder, or herbs for extra flavor.

So the real secret to French fries is simple: choose the right potato, prepare it carefully, fry it twice, and season it while it’s hot. That’s how you get fries that are crispy outside, soft inside, and full of flavor.
