Not every pairing needs to pour wine. ✨

Our non-alcoholic pairing is designed with the same thought and attention as our wine pairing, with each serve created to complement the dishes on your journey.

Featuring Guava Amazake: bright, refreshing and a little unexpected. A considered pairing for those choosing to keep things alcohol-free, without missing a moment of the experience.

Dombolo, but make it MERTIA.

Filled with slow-braised Wagyu, pickled onion and carrot, then finished with a bright hazelnut, parsley, lemon and garlic salsa.

A familiar comfort, reimagined as part of our South African Wagyu & Assiette of Starch main course

Every menu begins long before it reaches your table.

It starts with conversations, countless tastings, thoughtful refinement, and the pursuit of making each dish just that little bit better than before.

As October draws closer, Chef Matt and the team are putting the final touches on our next seasonal menu. We can’t wait to share what’s been taking shape behind the scenes.

The first bite sets the tone.

Silky chawanmushi, inspired by the traditional Japanese steamed custard, is finished with black lime powder. Much like black garlic, the limes are carefully aged, creating a deep citrus complexity that lifts the dish while preserving its delicate texture.

A simple start, thoughtfully considered.

We’re incredibly proud to share that MERTIA has been nominated in the 2026 World Luxury Restaurant Awards.

The World Luxury Restaurant Awards celebrate excellence within the global luxury restaurant industry, recognising restaurants for the experiences, food and service that set them apart.

Public voting officially opens on 17 August 2026 and runs for two weeks. Every vote counts, and when the time comes, we’d be incredibly grateful to have the support of our guests, friends and MERTIA community.

Meet Emil!

Thoughtful, meticulous and always paying attention to the little things. Emil has a natural eye for detail and a genuine care for making sure each guest feels looked after from the moment they arrive.

For him, great service is often found in the details, anticipating what’s needed, remembering the small details and making sure everything at the table feels effortless.

Calm, considered and always ready with a smile, Emil brings his own warmth to the MERTIA experience, and we’re very proud to have him as part of our team ✨

Every element on the plate tells its own story.

This is our take on a classic sausage roll—crafted from the trimmings of our South African 9+ Wagyu, enriched with Wagyu fat, paprika and chakalaka, then wrapped in buttery puff pastry. A small bite inspired by familiar flavours, reimagined the MERTIA way.

Chef Matt will present a 5-course menu showcasing a selection of MERTIA signatures, each thoughtfully paired with Capensis wines. Throughout the afternoon, winemaker Graham Weerts will guide guests through the wines, sharing the stories, vineyards, and philosophy behind every glass.
