Sushi Chef- Akido Restaurant, The Leonardo, Sandton, Johannesburg
Akido Restaurant, an authentic Japanese fine dining destination located in The Leonardo is
seeking a skilled and dedicated Sushi Chef to join our Sushi Bar team- the heart of our dining
experience.
The ideal candidate will demonstrate a deep respect for the art of sushi making, with mastery
in crafting nigiri, sashimi, and maki, and an appreciation for precision, presentation, and
seasonality.
Responsibilities:
• Prepare and present sushi dishes with refined technique, balance, and artistry;
• Ensure the freshness, quality, and proper handling of all fish and ingredients;
• Maintain the Sushi Bar setup, tools, and work area to fine dining standards;
• Engage warmly and professionally with guests seated at the Sushi Bar, enhancing
their Omakase experience;
• Collaborate closely with fellow chefs and support staE to ensure seamless
coordination and consistency;
• Contribute creatively to seasonal oEerings while upholding the authenticity of
Japanese culinary traditions.
Requirements:
• Proven experience in a fine dining or upscale sushi environment;
• Formal training in traditional and contemporary sushi techniques;
• Excellent knife skills, product knowledge, and attention to detail;
• A respectful, team-oriented approach and a commitment to excellence.
