The realisation that your "happy hormones" are made in your gut, and not your brain, is the first step health and happiness.
So I offer this gutwise lactobacillus rich, prebiotic/probiotic boosting fibre full treat.
Vegan Cabbage Curry
1/2 cabbage, sliced/shredded
1 celery stalk, diced/sliced
2 carrots, grated
4 cloves garlic, finely cubed
6 tbsp coconut oil
1 tsp cumin powder
2 tsp turmeric powder
1 tsp medium masala
Salt, black pepper, white pepper (to taste)
1/2 cup Water
1. Sauté garlic in coconut oil, add Celery and Carrot. Sauté lightly.
2. Add spices, fry lightly, then add Cabbage, Stir-fry 5-7 mins.
3. Add water, season. When spices have softened add thickening.
4. Mix 1/2 tsp Cornflour in 100mls water, stir and add. Simmer to desired thickness. Stirring curry occasionally.
*Brown Apple-Mint Sambals*
1 or 2 Granny Smith apples, cored, peeled and grated, allow to brown slightly before adding salt and lemon juice.
Juice of 1/2 lemon.
A light Sprinkle Salt
6 Fresh mint leaves, finely diced(to sprinkle)
Serve with Apple Mint Sambals.
