Our latest Single Origin is available | Guatemala Fraijanes Plateau ☕️

Produced in the volcanic highlands surrounding the Fraijanes Plateau, this coffee is shaped by rich mineral soils, cool mountain air and slow cherry maturation — conditions that create exceptional sweetness and clarity in the cup.

Carefully naturally processed and dried with the fruit intact, the result is a coffee that feels both vibrant and refined. Expect layered notes of ripe berries, dark cherry and red grape, carried by a silky body and finished with lingering milk chocolate sweetness.

This lot is SHB (Strictly Hard Bean) and EP (European Preparation), reflecting the quality and care taken throughout cultivation and processing.

Prepare for a cup with depth and elegance — expressive enough for the curious coffee drinker, yet balanced enough to return to every day.

It is roasted to highlight sweetness, texture and the distinct character of the bean.

EDUCATION | More about our Nespresso™️ compatible capsule production ☕️

Remember, we use around 5.5g of ground coffee in a capsule and around 18g of coffee in a double shot of espresso, so it is impossible to expect an identical espresso flavour extraction from one capsule.

We ensure that the coffee for our capsule is ground to perfection and we weigh every 5th or 6th capsule on the belt to ensure consistency during production.

Our capsule machine is fitted with a nitrogen generator to flush the capsules. Nitrogen is heavier than oxygen and so this removes excess oxygen from the coffee, preventing oxidation and extending the shelf life.
The UV lights kill all bacteria, sterilising the capsules before they are sealed.

The capsule itself is 100% compostable and it is designed to work perfectly in all domestic Nespresso coffee machines and thanks to the innovative compostable barrier materials used, it is able to guarantee a longer shelf life for the coffee.

This is a full-time, onsite position as an Assistant Coffee Roaster in Paarden Eiland, Cape Town. The Assistant Roaster will work under the guidance of the Head Roaster, assisting in daily roasting operations, ensuring quality control, and maintaining consistent output.

Key responsibilities include stock management of green coffee beans, collection of stock when required from suppliers, roasting and general roasting equipment maintenance and cleaning. Some additional duties may include delivering coffee to customers, packaging roasted coffee beans and assisting with capsule production. 
The role also involves supporting the team, fostering a collaborative work environment so the applicant must be willing to go above and beyond to ensure the success of the growing business.
 We roast on 30kg Besca Drum roasters and all roasting is done by hand. There is no computer software linked to the equipment therefore proficient knowledge on the roasting process is a requirement. The applicant must be willing to listen and learn, working as a team together with the Head Roaster, following established recipes and protocols. 
Qualifications / Requirements:

* Knowledge and understanding of the coffee roasting process
* Proficiency in record keeping and data entry for production processes
* Experience with quality control in coffee production
* Strong communication skills for teamwork and collaboration
* Organised with the ability to focus on details and maintain consistency
* Passion for coffee and eagerness to deepen knowledge
* Previous experience in roasting or the coffee industry
* Valid Driver’s License
* Fluent in English, well spoken
* Ability to lift heavy bags, stand for long periods and work in a physically demanding, noisy environment 
Salary negotiable, based on experience.

EDUCATION | We explore the importance of the grind size in coffee making ☕️

Many underestimate the importance of the grind and how much it affects the taste of your coffee. The grind size controls how quickly water moves through the coffee and how much flavour is extracted along the way.

If the grind is too fine, the water will struggle to move through the coffee resulting in over-extraction with bitter, dry flavours. If the grind is too coarse, the water will rush through quickly leaving the cup weak, sour and flat.

Using the right size grind for your brewing method is important for good extraction. You’ll get sweetness, a pleasant acidity, and a smooth finish where flavours feel complete. When the grind is right, the coffee tastes like it was meant to.

Be sure to select the grind size that is right for your brewing method at home or adjust your grinder accordingly.

Ground coffee isn’t just ground coffee.
