When the temperature drops, this is the kind of meal that brings everyone to the table.
With Miami Hammy Relish at the centre, this oxtail comes out tender, packed with flavour, and made for proper winter comfort.

Hammy Relish Oxtail 🍲
What you'll need:
- 1.5 kg oxtail, cut into pieces
- 30 ml oil (sunflower or olive oil)
- 1 large onion, chopped
- 2–4 carrots, peeled and sliced
- 2–4 celery stalks, sliced
- 4–6 cloves garlic, crushed
- 60 ml balsamic vinegar
- 175 ml dry red wine (optional)
- 1 can Miami Hammy Relish
- 400 ml beef stock
- 2 bay leaves
- 3 ml dried thyme
- Salt and black pepper to taste
- Optional: parsley, mashed potatoes, rice, or bread
How to make it:
Rinse and pat dry the oxtail, then season with salt and pepper.
Heat oil in a pot and brown the oxtail in batches. Set aside.
In the same pot, sauté onion, carrots, and celery until soft. Add garlic and cook briefly.
Deglaze with balsamic vinegar (and red wine if using).
Return oxtail to the pot. Add Miami Hammy Relish, stock, bay leaves, and thyme. Stir.
Cook in an Instant Pot on high pressure for 45 minutes, then allow natural release.
Remove oxtail and simmer sauce to thicken (optional).
Return oxtail to sauce and serve hot.
