Sourdough & Wild Botanicals | 7 & 8 November 2026

🍞 Day 1: The Art of Sourdough
Learn to care for your starter, prepare and shape your dough, and master the process of baking your own sourdough bread.

🌿 Day 2: Wild Botanicals
Explore local plants through mindful foraging and discover how to create botanical extracts using oils, vinegars and alcohol. You’ll also learn to turn these extracts into everyday botanical products.

You’ll leave with new skills, your own creations and a deeper appreciation for working with nature.

A proper South African morning starts with a dunk. ☕

We’re sharing our famous Ouma Swanepoel’s buttermilk rusks recipe, so you can bake a little of that comfort at home.

INGREDIENTS
• 1.5 kg self-raising flour (3 × 500 g)
• 500 g butter
• 3 eggs
• 1½ cups white sugar
• 1 teaspoon salt
• 2 heaped teaspoons baking powder
• 2 cups buttermilk, amasi or sour milk

METHOD
1. Rub the butter into the flour, then add the salt and baking powder.
2. Beat the eggs and sugar, then add the milk.
3. Combine the wet and dry ingredients without overmixing.
4. Transfer to greased loaf tins and bake at 180°C for 1 hour.
5. Allow to cool, then cut or break into pieces.
6. Dry in the oven at 70°C until completely dry and crisp.

Save this for your next baking day.
