Last week we had Julian, from SOVDA , visit the roastery from Germany to commission our Pearl Mini.

The Pearl Mini is an optical colour sorter that uses cameras to analyse the colour of coffee as it falls past them. These cameras perform over 500 inspections per second and uses jets of air to remove any coffee that is too dark/too light as it falls past the camera. It was incredible to watch it work for the first time last week, and it is now a key part of our quality control protocols in production. By removing these beans, we have gained infinitely greater control of the quality of the coffee in our bags.

There is lots of content coming about this incredible new addition to the roastery. Stay tuned 🫡🤝✨

This month we sent out the Cafe Granja La Esperanza Potosi Tres Dragones. FUNKY 🕺

We’re approaching it slightly differently on filter to get results that are balanced, clean and sweet while still expressing this coffees bold character. Luhle brews it on the Origami Brewer, 18g coffee to 300g water. We’ve found two things to be key when approaching this coffee on filter:
- Slightly wider ratio than normal
- Ground coarser than normal

Los Pirineos is back! 😍

We are so excited to be sharing coffee from Diego and his team again! This pink bourbon is tasting bright and clean 🩷🇸🇻

Steeped in a rich history of coffee production, Los Pirineos has been in the Baraona family since 1889, making it one of the longest standing coffee producing farms in El Salvador, and the world. Situated atop a dormant volcano, setting the scene for dramatic views of the valleys below, often sitting above cloud cover, giving this farm a magical aura to match its wealth of high quality coffee production. Over more than a century, the Baraona family have built a reputation of excellence, experimenting with different varietals and setting the standard globally for quality coffee from South America. Diego Baraona, somewhat of a renaissance man, being an accomplished athlete, an engineer and a wizard with a guitar, took over the farm in 2020 after the sudden death of his father, Gilberto Baraona. Diego was not planning on becoming a coffee producer, but Gilberto had built a stellar reputation, leaving big shoes to fill, having won 17 Cup of Excellence awards and establishing Los Pirineos as a leader in experimental processing in El Salvador. Diego knew that he had to uphold the family legacy. Since that time, Diego has led the farm further down the road his father had paved, leading innovation in processing and agronomy on the farm. The farm grows over 70 different varietals, with several experimental plots for research, most notably being one of the globes most important nurseries of Pacamara coffee, and owns the largest seed bank in El Salvador. A farm and family steeped in a rich and extensive heritage of coffee agriculture and production, we are proud to have their coffee in our roastery.
