Today marks 5 years of trading for The Butcher’s Mermaid ❤️
When we started, I was excited as hell — but also terrified. I had no idea if people would support the vision.
The first year was chaos. Some nights we had almost no tables, just one or two couples returning every week. Funny enough, those few loyal customers gave me confidence when I needed it most.
Then came the hard years.
After year 2, we were honestly very close to shutting it down. Hospitality is not for the weak. Sleepless nights, stress, pressure and moments where giving up would’ve been easier.
But somehow… we kept going.
And the reason we’re still here today is PEOPLE.
My staff first — especially my butchers, kitchen team, waitrons and every hand that helped keep this place running through the madness.
My partners, Mathias En Koen — thank you for trusting the process, believing in the vision and standing strong through the difficult moments when things felt uncertain. Your perseverance and support over the years has meant more than you know.
To our loyal customers: thank you. Some of you have been with us since day one, and I’ll never forget that support.
5 years later…
We’re still here.
Still growing.
Still slightly chaotic.
And unbelievably grateful.
Thank you for every booking, every steak ordered, every bottle opened and every bit of support along the way.
