Breakfast has been a long-time cherished ritual 🍳

Besides our very popular and well-loved Croissant Benedict, we’ve been serving so many wholesome breakfast dishes over the years. We were first inspired by Montreal’s thriving breakfast, brunch and bagel scene and ate endless eggs Benedicts, waffles and pancakes on weekends. We continued to develop our taste for this treasured ritual through our travels around the globe. The Coco Safar breakfast experience is today a recollection of many delightful dishes, authentic ingredients, sweet and savory morning traditions we enjoyed discovering and devouring while globetrotting. Each dish we create tells a story of a special place we had the privilege to visit that galvanized our menu creativity.

Don't black out with envy 😛

We were pleasantly surprised by how positively strong the reaction to our activated charcoal croissant was when it was first created and baked in 2021. Perhaps the maple cheesecake cream filling, maple glazing and crunchy walnuts had something to do with it? We definitely think so. This quintessential Canadian flavor combo paired so well with the slightly savory crispiness of the black croissant dough that this will forever remain a classic of our viennoiserie collection, next to be sampled in Paris later this year....

Does it snow in 🇿🇦 

That's a question we're often asked. You bet it does! Mostly between May and September during the southern hemisphere winter,  from the Cederberg and Overberg coastal mountains in the Western Cape to the Drakensberg mountains bordering South Africa and Lesotho, and even sometimes on Table Mountain too!

Johannesburg, which is located on a high-altitude plateau called the 'highveld', also get some  ❄️ from time to time, as in July 2023 on a very cold day when we unexpectedly received quite a bit of snow 🥶

Doughnuts and beignets in one shape or another have been around for a very long time!

From "loukoumades' being awarded to champions of the original Olympics Games more than 2000 years ago to 'luqmat al-qadi' enjoyed in 13th century Bagdad, this is undoubtedly a sweet that has seduced many over centuries. We will celebrate this millennium rich tradition with our own creations of couture doughnuts in Paris coming later this year.

A trip around the world's Coffee Belt, a la Jules Verne.

This was in a nutshell the brief we gave local artists as part of creating an art installation for our new Sea Point flagship in 2017. We wanted a one of kind piece that would capture in a whimsical way where coffee grows in equatorial regions around the globe, which is traditionally between the Tropics of Cancer (Northern Hemisphere) and Capricorn (Southern Hemisphere).

What came out was a playful take on the spirit of Verne's Voyages Extraordinaires, illuminated by a hand-blown light fixture with moving planetary cogs - sitting on a nautical-inspired compass rose, part of what came to be known as the "lollipop" at the entrance of our store. Complemented with true vintage Coco Safar swinging tables on wrought-iron swivels, these soon became prized seats "in the house".

In our next chapter, we intend to take the spirit of this Jules Verne inspired creation along with us to Paris, where we were first influenced by his boundless imagineering.

Chocolate season 💐

Easter month is always an inspiring time of the year to come up and create new chocolate-based bakery treats. Perception is reality.

The Coco Safar brand is 20 years in the making, but our Cape Town journey started in Woodstock in 2014-15. We first established a food & bakery lab and coffee cupping room on Salt River Road, surrounded by a wealth of local artisans infusing the neighborhood with a thrilling creative energy. We have very fond memories of our time in Woodstock, fueled by regular visits to the Old Biscuit Mill just around the corner.

Inspired by Cape Town designated as Word Design Capital in 2014,  we set in motion the sampling and curating of our bespoke design decor elements that would be used in the flagship store. We brought to life the timeless aesthetic of Coco Safar and retro-chic look & feel for which we have become known for, in a prototype store we built before even opening our first store!

This was all about making Coco Safar a reality in our new innovation hub. We manifested a store in preparation of opening our first café at Cavendish Square in the southern suburbs on the south side of Table Mountain one year later.

Dog or no dog? 🐕

Times have changed. It used to be that dogs were strictly prohibited in cafés and restaurants and supermarkets, basically in all places handling and selling food. Not even on outdoor terraces or patios, period.  In the past 5 to 10 years, while grocery stores have continued enforcing this rule, it's become harder for cafés and restaurants to say no to their customers with dog owners increasingly wanting to bring their pet along for a 15-minute coffee pit stop or a 2 hour-brunch with the family or friends. 

A restaurant in Hout Bay, Cape Town recently had to enforce a no-dog policy following a serious incident. In Manhattan, busy and popular establishments like Soho's Balthazar do welcome dogs. In Quebec City, Canada, dogs are not allowed indoor even when very cold outside - although now permitted on patios in the summer, on a short leash.

We know this a polarizing topic but would love to hear your thoughts on the matter wherever you live. Do you think dogs should be permitted inside cafés and restaurants? Permitted to sit on chairs? Under what conditions would that be acceptable to you, if so?

Pistachio croissant since 2006 🧡

We baked our first pistachio croissants in Montreal back in 2006. People immediately loved it with a passion. To take it up a few tasty notches, we added a white chocolate topping with a pistachio cream filling (eventually changed to a pistachio praline), when we started serving it in Cape Town in 2016.  We've always been in awe at how popular this croissant has remained for 20 years wherever we baked it. 

Legend has it that the Queen of Sheeba herself enjoyed eating pistachios so much that she banned everyone else from enjoying them and decreed them a royal food while she reigned. 

Thanks goodness it's no longer a "food of royalty"! It's certainly an indulgence but why are pistachios more expensive than all other nuts?

Besides the fact that the world has really gone nuts for pistachio confectionery, you'll be amazed to know that:

-  it takes 7 to 10 years (and more) for a pistachio tree to become mature for production in desert-like, semi-arid areas - 4 to 8 years in the case of pistachios grown in the Northern Cape of South Africa

- trees only fruit every other year 

- harvest and sorting is often done by hand

- crops are very climate sensitive

- a tree yields only 1/5 obtained from other nut trees

We can't wait to take this bakery treat with us to Paris, and take it to the next level.

Coffee theater that's been around for about 200 years, all over the world ☕

The siphon is actually one of the oldest and simplest brewing methods, despite coming across as one of the most complex.

The basics are relatively simple, incorporating two chambers. The bottom one is filled with water, which is then heated to create v***r pressure to propel it upwards. It then mixes with the coffee grounds in the top chamber, after which the heat source is turned off and gravity takes over.The brewed coffee in the top chamber then gradually makes its way back into the bottom chamber, travelling through a filter along the way to remove the coffee grounds. 

The earliest known patent for a siphon coffee brewer was filed by Loeff of Berlin in the 1830s, but it was a French woman, Marie F***y Amelne Massot of Lyons, France – better known as Mme. Vassieux from Lyon, who designed and patented the first commercially successful vacuum brewer in 1840. Her coffee maker introduced the classic vacuum pot look, two glass chambers resembling an hour glass. (see illustration on last photo). 

Not to be confused with the Naperian Coffee Pot invented by a Scottish inventor who also created a version of the vacuum pot around the same time. However, James Napier never patented his brewer... The Naperian differed significantly from the double balloon brewer, but it operated on the same principle. 

The technique was introduced to Japan around 1920 with the growth of interest in coffee and the takumi skilled artisans of the time  took pride in producing superior quality brews with scientific precision, as you can imagine.

Do yourself a favour, and take the time to try this slow brew method and delicious ritual next time you head out to your favourite espresso bar.

Bonnes nouvelles! Good news!

Can't curb our enthusiasm any longer: Paris, here we come! Que nous sommes heureux d'annoncer le lancement prochain de Coco Safar à Paris en 2026. This next chapter about to unfold by design, is years in the making. 

We can't wait to share our brand on the world stage in the City of Lights, a metropolis we have dearly loved for more than 30 years. Dreams do come true. Stay tuned for regular updates on the launch of our Paris flagship.

PS: This priceless video was captured in the Marais in 2021, after the Covid liberation. We recently found out that Madeleine is the name of this enchanting lady who's been dancing on the streets of the Marais on Sundays for years. What a Parisian gem! This is our new favorite mini Madeleine 😉

Did you know 🦋

Our butterfly icon was created 20 years ago , in the back streets of Griffinstown, Montreal by our then branding & design agency.

Inspired by 2 F in SaFar our our logo, it has since become our own infinity sign and a symbol of our journey of perseverance and resilience through partnerships, projects, cities and continents. What we love most, is that it was first designated as a "butterfly" by a customer who enjoyed its simple yet meaningful design..... and so the Coco Safar butterfly was born. It truly means the world to us: joy, hope, transformation, renewal, new beginnings and freedom.

PS: .... meanwhile, Griffinstown in Montreal has gone through a remarkable transformation and metamorphosed into a desired vibrant neighborhood along the Lachine Canal, a world away from the old dying industrial Irish district it was back in 2005.
