Portioning the dough is a very important step. If done wrong it will severely impact how you handle and stretch out the dough.

Key notes:

Don't put too much olive oil on your work bench. Can make it more difficult to pinch dough closed.

Make sure you pinh and close dough ball appropriately. If not done this may cause air bubbles in dough ball resulting in thin and uneven dough distribution on stretch. This may result in tearing.

Make sure to keep the top side of your dough the top side of the dough ball. This side of the dough has been exposed differently to the dough underneath. Choosing this side to be the top of the dough and of the pizza will aid in strength.

Let me know what else you would like to see.

When you dough mixer breaks and goes in for repairs the work doesn't stop.

Thought I would record and share how I make dough by hand, which isn't often.

Hopefully this will provide the home bakers/cooks the ability to make dough with more confidence.

The recipe is:

Poolish:
500g 00 flour (12% protein)
500g water
4g yeast
Ferment for 12-16 hours room temp

Add poolish
200g water
450g 00 flour
