A little welcome from Hội An.

❤️❤️❤️

Crispy rice crackers, served with our house-made chili sauce, are placed on the old terracotta roof tiles — a small part of the house that became Madame Hiền.

We serve them as a little welcome for our guests to enjoy while waiting for their dishes, in the slow and gentle way Hội An has always welcomed those who stop by.

Bánh đa giòn, dùng cùng sốt ớt nhà làm, được đặt trên những mái ngói cũ — như một phần nhỏ của ngôi nhà đã tạo nên Madame Hiền.

Chúng tôi phục vụ bánh đa để mời khách nhâm nhi trong lúc chờ món, như cách Hội An vẫn thường chậm rãi đón những vị khách ghé thăm.

Loại tiêu rừng này được tìm thấy trên những dãy núi phía nam Hội An, cách Kon Tum khoảng 108 km về phía bắc.

Không giống hạt tiêu quen thuộc, nó gần như không mang vị cay nồng. Thay vào đó là cảm giác tê nhẹ đầu lưỡi, cùng hương thơm tươi sáng gợi nhớ đến sả, chanh và yuzu.

Mỗi năm, vào cuối tháng 7, người dân tộc địa phương chỉ thu hoạch một lượng nhỏ khi tiêu bước vào mùa chín. Ở Madame Hiền, chúng tôi tận dụng thứ hương thơm tươi mát này cocktail và các món ăn

This wild pepper is foraged in the highlands south of Hoi An, about 108 km north of Kon Tum.

Unlike common black pepper, it isn’t intensely spicy. Instead, it offers a gentle tingling sensation on the tongue, with bright, citrusy aromas reminiscent of lemongrass, lemon, and yuzu.

Every year, at the end of July, local ethnic communities hand-harvest only a small quantity during its short summer season. At Madame Hien, we are appreciated these treasure in our food and cocktails
