Yesterday was a monthly "An Chay" day in Vietnam—essentially a vegetarian day—so I arranged a completely vegetarian lunch menu for the staff. It made me realize all over again that our restaurant actually has a surprising number of vegetarian options; I’m thinking of creating a dedicated vegetarian section on the menu.

Zaru Soba is a traditional Japanese cold soba dish consisting of boiled buckwheat noodles that have been thoroughly chilled in cold water and served on a bamboo sieve known as a *zaru*.
The primary reason for slurping soba noodles—making a distinct "slurping" sound—is to draw in air along with the noodles, thereby maximizing the enjoyment of their rich, inherent aroma deep within the nasal cavity.

It’s a shame about the rain today.
By the way, I’d like to talk a little about one of my favorite dishes: *Tenshinhan*. It’s made with very simple ingredients,
It’s a unique dish—a Japanese invention that puts a creative spin on Chinese cuisine. While it can be enjoyed at Chinese restaurants across Japan, it does not exist in China. It consists of an omelet containing ingredients like imitation crab and wood ear mushrooms served over rice, all topped with a special thickened sauce that strikes an exquisite balance between sweetness and savory flavor. yet it’s a dish I sometimes get an irresistible craving for. I might be biased since I make it myself, but it really is delicious.
