There is a beautiful story that begins in Bhutan — a land where people have grown soybeans for generations. Yet for many years, most of those soybeans were used only for animal feed, and very few people realized that these humble beans could be transformed into many nutritious foods for people.
Then one day, a travel company specializing in vegetarian experiences arrived in Bhutan. During their journey to explore local sources of plant-based protein, they discovered something surprising: tofu was almost unknown there.
And that discovery sparked an inspiring idea.
The company brought equipment, machinery, and skilled makers to teach local monks how to create the very first blocks of tofu. From the small kitchens inside the monasteries, the gentle aroma of fresh soybeans began to spread. People who tasted tofu for the first time were amazed to discover how something so simple could be so nourishing, healthy, and comforting.
But the journey did not stop with making tofu.
Their dream was bigger — they wanted the people of Bhutan to learn how to create, enjoy, and truly understand the value of the soybeans already growing in their own land. And so, this book was created: a bridge connecting soybeans to everyday life in Bhutan, not simply as a crop, but as a sustainable source of nutrition for the future.
Today, it is tofu.
Tomorrow, it may be nutritious plant-based cheese made from soybeans, produced in Bhutan by the Bhutanese people themselves.
Sometimes, the greatest changes in a country begin with something as small as a single bean.
