our layered apple mochi a -
we bake it with sliced apples and toasted coconut until the edges caramelize and the center is soft and chewy. on the side: a tahini cookie for crunch, red bean purée for a taste of the earth, and a light honey yogurt espuma to pull everything together.

we’ve always loved desserts that aren’t just sweet - something with texture, warmth, nuttiness, and a little surprise in each bite.
