[LIMITED SERIES] VIET NAM | FAIR FARM | LIBERICA NATURAL 🌱🌱🌱

Ha Long’s parents have grown coffee for 39 years in Vietnam’s Central Highlands. In 2020, she returned home to pursue specialty coffee with a new vision. Hao, a German engineer, came to this red basalt soil and chose to stay. Together, they believe coffee is not only about yield, but about people, land, and long-term value.

Rather than pursuing costly third-party certifications, they focus on transparency, shared growth, and sustainable farming that respects both farmers and soil. Today, Fair Farm spans over 130,000 m² in Gao Commune, Gia Lai, working closely with local farmers who are part of the team.

This Liberica is grown at Fair Farm and sourced from smallholders in Gao. The cherries are fermented in water with Saccharomyces cerevisiae yeast to suppress harmful microorganisms, then dried on raised beds under careful control after two days.

This coffee achieved 7th place in the Vietnam Coffee Producer Competition 2025 and 8th place in the SEA Green Coffee Competition 2025, reflecting the exceptional quality of the lot and the craftsmanship of Fair Farm.

🌲 Auromar Panama is a family project of the Brenes–Eleta family, dedicated to cultivating Geisha and premium Arabica varieties sustainably in harmony with nature.

🌱 The farm sits on the Candela highlands in Chiriquí province at 1,570–1,770 meters above sea level. Of 30.5 ha, only 14.5 ha are cultivated; the rest is preserved rainforest. Dense shade and interplanted native trees create a cool microclimate, producing rare, high-quality coffee with complex structure.

💧 The workforce, mainly from the Ngäbe-Buglé community, handpicks each ripe cherry and is fairly compensated and trained. Post-harvest, beans are carefully processed, hand-selected, vacuum-packed, and strictly quality-controlled.

🌟 Firestone Geisha, one of Auromar’s most renowned lots, won first place in the Geisha Washed category at Best of Panama 2022 with a score of 96, exemplifying the classic Panama Geisha profile: elegant, bright, floral, and richly layered.

🌲 Với kinh nghiệm và tình yêu được gìn giữ qua bốn thế hệ làm cà phê, năm 2009, Mauricio Vargas Vindas và gia đình thành lập micromill Altos del Abejonal tại San Pablo de León Cortés, Tarrazú.

🌱 Altos del Abejonal nằm ở độ cao hơn 1800 mét so với mực nước biển, chỉ cách thủ đô San José của Costa Rica 70km về phía nam, nơi có dãy núi Talamanca Sierra chạy ngang qua với những đỉnh núi cao trên 3000m. Đất núi lửa cùng lớp mây bao phủ vào buổi chiều tạo nên điều kiện hoàn hảo để Mauricio sản xuất những lô cà phê xuất sắc tại Altos.

💧 Đây có lẽ là lô cà phê Typica sơ chế Washed ngon nhất chúng tôi từng được thử. Bộ hồ sơ hương vị hoa trắng, cam chanh cùng hậu vị ngọt ngào gợi nhắc chúng tôi rất nhiều về các mẫu Geisha Panama.

Each set of four lots introduced in every release carries not only the breath of our homeland, but also the spirit and dedication of the farmers and producers we are fortunate to work alongside.

Mẫu cà phê canh tác thuận tự nhiên này là biểu trưng cho sự thích nghi và bền bỉ.

Trong suốt 9 năm, người nông dân vườn Cánh Cam không sử dụng phân hoá học, thuốc trừ sâu hay chất điều tiết sinh trưởng. Thay vào đó, cây trồng được nuôi dưỡng bằng phân bò, phân gà Nhật, đạm cá và cả những trái hồng không đạt chuẩn,…

Từ những cây cà phê mắc bệnh rỉ sắt, các tín hiệu tích cực dần xuất hiện. Mỗi năm lá lại xanh hơn, rỉ sắt ít hơn và cây ra trái nhiều hơn. Mùa vụ 2024-2025 đánh dấu lần đầu tiên vườn có đủ sản lượng để thương mại hoá, dù chỉ hơn 60 kg nhân xanh, một con số cực kỳ khiêm tốn với mảnh đất rộng 0.5 ha.

Một hành trình của sự kiên cường, kiên nhẫn và kiên sinh.

This naturally cultivated coffee is a symbol of adaptability and resilience.

For nine years, the farmers at Canh Cam farm have used no chemical fertilizers, no pesticides, and no growth regulators. Instead, the coffee trees are nourished with organic inputs such as cow manure, Japanese chicken manure, fish amino, and even unsellable persimmons…

From coffee trees once affected by leaf rust, positive signs have gradually emerged: each year the leaves become greener, the rust decreases, and the trees bear more fruit. The 2024–2025 harvest marks the first time the farm has enough yield for commercial production — just over 60 kg of green beans, an extremely modest number for a 0.5-hectare plot.

A journey of endurance, patience, and renewing resilience.
