Cultivated from seeds of Tra Que Village, the herb garden at The Merchant brings a fresh harvest to the kitchen each day.

At first light, while the morning mist still softly hangs, fresh produce is gathered directly from the garden, preserving its crisp texture and natural sweetness.

In the hands of our chefs, these garden harvests are thoughtfully woven into each dish, bringing the colours, aromas and flavours of the land to the table.

Ươm mầm từ nguồn giống của làng rau Trà Quế, khu vườn thảo mộc tại The Merchant mỗi ngày đều mang về những nguyên liệu thanh lành cho gian bếp.

Sáng tinh mơ, khi sương mai vẫn còn giăng mắc, rau củ được thu hoạch ngay tại vườn, giữ trọn độ tươi giòn và vị ngọt tự nhiên.

Taste of The Merchant: 4 Signature Dishes To Discover

At The Merchant Restaurant, the story of Hoi An begins with the ingredients closest to home.

Fresh catch from the waters of Cu Lao Cham. Fragrant herbs from Namia's mini garden. Locally-sourced meat from organic farms. Each dish brings these local ingredients together with thoughtful preparation and a touch of creativity, keeping the flavours of Hoi An at heart.

- Citrus Chicken Rice: Roasted chicken with a hint of lime leaf, served with golden turmeric rice and fresh local herbs.
- Wild Catch Sea Bass: Juicy grilled sea bass with seasonal vegetables and a light turmeric jus.
- Namia Rice Paddy Duck: Tender roasted duck breast paired with light red rice noodles, fragrant paddy herb and a creamy fermented tofu–peanut sauce.
- Cao Lau Carbonara: Cao Lau noodles with savoury guanciale, rich duck egg yolk and fragrant Phu Quoc black pepper.

Hải sản được đánh bắt từ miền biển Cù Lao Chàm. Thảo mộc được hái ngay tại vườn nhà. Nguồn thịt được chọn lọc từ các trang trại canh tác hữu cơ. Mỗi món ăn là sự kết hợp nhịp nhàng giữa nguyên liệu địa phương. Qua kỹ thuật chế biến chỉn chu, từng tầng hương vị dần hiện lên, vừa gợi nét đặc trưng của ẩm thực phố Hội, vừa mở ra những trải nghiệm mới mẻ.

- Cơm Chiên Đùi Gà Nướng: Gà quay thoảng hương lá chanh, dùng kèm cơm nghệ vàng ươm và các loại rau thơm bản địa.
- Cá Chẽm Nướng Nghệ: Cá chẽm nướng giữ trọn vị ngọt mọng nước, được cân bằng bởi rau củ áp chảo và xốt nghệ thanh nhẹ.
- Ức vịt quay: Ức vịt quay mềm mọng, dùng cùng bún gạo lứt thanh đạm, cân bằng bởi sốt chao đậu phộng béo bùi.
- Cao Lầu Sốt Trứng Phô Mai: Sự kết hợp thú vị giữa sợi Cao Lầu truyền thống cùng thịt má lợn muối guanciale, lòng đỏ trứng vịt béo ngậy và chút thơm nồng của tiêu đen Phú Quốc.
