Claire Wadsworth and Nikki Hill are the owners of La Copine, an oasis of a restaurant in California’s Mojave Desert. It’s been a beloved destination for over a decade, winning over a mix of Joshua Tree locals, LA weekenders, and celebrities passing through. Now they’re sharing La Copine’s thoughtful takes on all-day cooking in a debut cookbook. It’s so fun to have Claire and Nikki in the studio to talk about what it takes to run a restaurant in the high desert, their journey as a couple in business together, and making this book.

cured salmon, caper cream cheese, tomato, and cucumber on open-faced rye toast

You can always buy a store-bought cured salmon for a quick brunch spread, and the caper cream cheese and tomato spice will make it taste like La Copine, but to get the dish that ultimately tastes like it came from the restaurant, you must try making our cured salmon with ground fennel and coriander seeds and fresh dill. It is a particularly special dish to us, as we served it smorgasbord-style at our wedding.

La Copine is french slang for girlfriend! Naming the business “La Copine” was a cheeky way for Claire and Nikki to let people know that they were a couple. In French, a copine or copain is a close trusted companion—the word le copain originates from latin to “with bread” highlighting a deep connection between friendship and sharing food.
