Bubble waffle pops debut at Penguin City Night Market! What are bubble waffle pops? I’m glad you asked! They are fluffy on the inside, slightly crunchy on the outside! Our special this month is Cosmic Cookies & Cream- we bake mini Oreo into the center of the waffle and top it with alien (green) marshmallow fluff, chocolate syrup, and Oreo cookie pieces! See you tomorrow from 6-9pm! We’ll be the ones dressed as aliens!

When I was 19, I dropped out of college to go to cake decorating school in Chicago. Then I wanted to be a chef, so I *almost* went to cooking school. After that, fashion merchandising was my love for a little while (enough to get a degree, anyways). I did that, met some amazing people, and decided I did not want to do that anymore. I started working in public service at a library, worked hard for my Master of Library Science and I’m still there, a programming librarian. If I get to only do this life once, I have to make room for the things in life that make me happy, and this mini pancake and waffle pop cart is one of them.
