๐ฆ ๐๐ถ, ๐โ๐บ ๐ ๐ถ๐ฟ๐ฎ๐ป๐ฑ๐ฎ, ๐๐ต๐ฒ ๐ณ๐ฎ๐ฐ๐ฒ ๐ฏ๐ฒ๐ต๐ถ๐ป๐ฑ ๐๐น๐๐๐ฒ๐ป-๐๐ฟ๐ฒ๐ฒ๐ฑ๐ผ๐บ ๐๐ฎ๐ธ๐ฒ๐ฟ๐!
Since Iโm slowly getting Gluten-Freedom Bakery back on its feet, I thought it was time to reintroduce myself and share a little bit about how this bakery came to be.
I was diagnosed with ๐ฐ๐ฒ๐น๐ถ๐ฎ๐ฐ ๐ฑ๐ถ๐๐ฒ๐ฎ๐๐ฒ ๐ถ๐ป ๐ฎ๐ฌ๐ญ๐ญ, and suddenly I had to learn an entirely new way of eating and baking. I learned firsthand what it felt like when foods everyone else could enjoy were no longer an option for me.
In ๐ฎ๐ฌ๐ญ๐ฐ, just before my oldest child turned one, I opened Gluten-Freedom Bakery. That little one is ๐ญ๐ฏ ๐ป๐ผ๐, which is pretty crazy to think about. ๐ฅน
In the beginning, I simply baked gluten free. But as the bakery grew, so did the needs of the people who found me.
After having my daughter in 2015, I had to go dairy free for a period of time, so I learned to adapt my recipes again. Then came requests for soy free and corn free treats. Over the years Iโve also gotten calls from moms trying to find something special for their little oneโs first birthday because their child couldnโt have eggs.
Those experiences changed the way I bake.
Today, many of my products are ๐ด๐น๐๐๐ฒ๐ป ๐ณ๐ฟ๐ฒ๐ฒ, ๐ฑ๐ฎ๐ถ๐ฟ๐ ๐ณ๐ฟ๐ฒ๐ฒ, ๐๐ผ๐ ๐ณ๐ฟ๐ฒ๐ฒ ๐ฎ๐ป๐ฑ ๐ฐ๐ผ๐ฟ๐ป ๐ณ๐ฟ๐ฒ๐ฒ, and I can also make egg free and vegan treats.
Because sometimes a cupcake isnโt just a cupcake. ๐ง
Sometimes itโs a child getting to eat birthday cake with everyone else.
Sometimes itโs someone with food restrictions walking up to a dessert table and realizing there is actually something there for them.
And sometimes itโs getting to say ๐ฌ๐๐ฆ, ๐ฌ๐ข๐จ ๐๐๐ก ๐๐๐ฉ๐ ๐ง๐๐๐ฆ when they are so accustomed to hearing no.
That is why I believe ๐ฒ๐๐ฒ๐ฟ๐๐ผ๐ป๐ฒ ๐๐ต๐ผ๐๐น๐ฑ ๐ต๐ฎ๐๐ฒ ๐๐ต๐ฒ ๐ฝ๐ฟ๐ถ๐๐ถ๐น๐ฒ๐ด๐ฒ ๐๐ผ ๐ถ๐ป๐ฑ๐๐น๐ด๐ฒ. ๐
Gluten-Freedom Bakery has also given me a different kind of freedom. I started this business with a very little one at home, and it gave me the opportunity to do something I loved, help provide for my family and still have the flexibility to be there for my children.
And goodness, this little bakery has had quite the journey since then.
Gluten-Freedom Bakery started right in my home, but the ๐ฉ๐ถ๐ฐ๐๐ผ๐ฟ๐ถ๐ฎ ๐๐ฎ๐ฟ๐บ๐ฒ๐ฟ๐ ๐ ๐ฎ๐ฟ๐ธ๐ฒ๐ played a huge part in helping me grow it. I was a consistent vendor there for at least three years, building relationships with customers and getting my products into the hands of more people in our community.
Eventually, the business grew beyond my home and I opened my first commercial location inside the airport. There I was able to expand beyond the baked goods and custom orders I had built the business around and offer a full lunch menu as well.
Then COVID happened, and Gluten-Freedom Bakery came back home.
Eventually, I built a commercial kitchen right on my property. Later, I took another big leap and opened a second location in the mall under a completely different name, ๐ฆ๐๐ฒ๐ฒ๐ & ๐ฆ๐ฎ๐๐ผ๐ฟ๐ ๐๐ฎ๐ธ๐ฒ๐ฟ๐ ๐ฎ๐ป๐ฑ ๐๐ถ๐๐๐ฟ๐ผ.
There was actually a reason I chose a different name for that location. I didnโt want someone to see โgluten freeโ and immediately decide the food wasnโt for them. Everything we served was gluten free, but unless someone asked, most people never even knew. We offered baked goods and a full lunch menu, and people simply got to enjoy the food for what it was.
That chapter taught me a lot, including learning when I had taken on more than I could sustainably manage.
There have been busy seasons, quiet seasons and ๐ฎ ๐๐ฒ๐ฎ๐๐ผ๐ป ๐ผ๐ฟ ๐๐๐ผ ๐๐ต๐ฒ๐ป ๐ ๐๐๐ฒ๐ฝ๐ฝ๐ฒ๐ฑ ๐ฎ๐๐ฎ๐ ๐ณ๐ฟ๐ผ๐บ ๐๐ต๐ฒ ๐ฏ๐ฎ๐ธ๐ฒ๐ฟ๐ ๐ฎ๐น๐๐ผ๐ด๐ฒ๐๐ต๐ฒ๐ฟ.
Life changed along the way too. The bakery was reopened, the commercial kitchen on my property was eventually sold, life took me to Yoakum for a while, and Gluten-Freedom Bakery returned once again to its home based roots.

And in a pretty special full circle moment, some of my products are beginning to make their way back to the Victoria Farmers Market, the same place that helped this little home based bakery grow all those years ago. ๐
This time Iโm not trying to do everything all at once.
Iโm a ๐๐ถ๐ป๐ด๐น๐ฒ ๐บ๐ผ๐บ ๐ผ๐ณ ๐๐ต๐ฟ๐ฒ๐ฒ, I work, life is wonderfully busy, and Iโm rebuilding this little business ๐ผ๐ป๐ฒ ๐ฏ๐ฎ๐๐ฐ๐ต, ๐ผ๐ป๐ฒ ๐ผ๐ฟ๐ฑ๐ฒ๐ฟ ๐ฎ๐ป๐ฑ ๐ผ๐ป๐ฒ ๐ผ๐ฝ๐ฝ๐ผ๐ฟ๐๐๐ป๐ถ๐๐ ๐ฎ๐ ๐ฎ ๐๐ถ๐บ๐ฒ.
Iโm currently taking select orders, participating in markets and events and working toward getting Gluten-Freedom Bakery products back into local businesses. I want to grow in a way that allows me to continue doing something I love while still having the freedom to be there for my kids.
More than a decade later, a lot has changed.
