Baked Garlic Butter Salmon with Zucchini & Cherry Tomatoes
Ingredients
The Salmon & Vegetables:
• 4 Salmon fillets (about 170–200g / 6–7 oz each)
• 2 Medium zucchinis, sliced into rounds
• 250g (9 oz) Cherry tomatoes, halved
• 2 tbsp Olive oil
• Salt and black pepper, to taste
The Garlic Butter Sauce:
• 60g (4 tbsp) Unsalted butter, melted
• 4 Garlic cloves, minced
• 1 tbsp Lemon juice
• 1 tsp Italian seasoning
• 1 tsp Paprika
• 1 tbsp Fresh parsley, finely chopped
For Garnish:
• Extra fresh parsley
• Lemon wedges for serving
Instructions
1. Preheat the Oven: Preheat your oven to 200°C (400°F). Lightly grease a large baking dish.
2. Arrange the Vegetables: Spread the zucchini slices and cherry tomatoes evenly in the baking dish. Drizzle with olive oil and season with salt and pepper.
3. Prepare the Salmon: Place the salmon fillets on top of the vegetables.
4. Make the Sauce: In a small bowl, combine the melted butter, garlic, lemon juice, Italian seasoning, paprika, and parsley.
5. Season the Fish: Brush the garlic butter mixture generously over each salmon fillet and drizzle the remaining sauce over the vegetables.
6. Bake: Bake for 18–22 minutes, or until the salmon flakes easily with a fork and the vegetables are tender.
7. Finish & Serve: Sprinkle with extra parsley and serve immediately with lemon wedges.
