Baked Garlic Butter Salmon with Zucchini & Cherry Tomatoes

Ingredients

The Salmon & Vegetables:

• 4 Salmon fillets (about 170–200g / 6–7 oz each)

• 2 Medium zucchinis, sliced into rounds

• 250g (9 oz) Cherry tomatoes, halved

• 2 tbsp Olive oil

• Salt and black pepper, to taste

The Garlic Butter Sauce:

• 60g (4 tbsp) Unsalted butter, melted

• 4 Garlic cloves, minced

• 1 tbsp Lemon juice

• 1 tsp Italian seasoning

• 1 tsp Paprika

• 1 tbsp Fresh parsley, finely chopped

For Garnish:

• Extra fresh parsley

• Lemon wedges for serving

Instructions

1. Preheat the Oven: Preheat your oven to 200°C (400°F). Lightly grease a large baking dish.

2. Arrange the Vegetables: Spread the zucchini slices and cherry tomatoes evenly in the baking dish. Drizzle with olive oil and season with salt and pepper.

3. Prepare the Salmon: Place the salmon fillets on top of the vegetables.

4. Make the Sauce: In a small bowl, combine the melted butter, garlic, lemon juice, Italian seasoning, paprika, and parsley.

• 2 tbsp Lemon juice

The Spiced Syrup:

• 400g (2 cups) Granulated sugar

• 100g (1/2 cup) Light brown sugar, packed

• 60g (1/2 cup) Clearjel or Cornstarch

• 1 tsp Ground cinnamon

• 1/4 tsp Ground nutmeg

• 1/4 tsp Ground cloves

• 1.2 Liters (5 cups) Apple juice or cold water

• 1 tsp Vanilla extract

Instructions

1. Prepare the Apples: Place the peeled and sliced apple chunks into a large bowl. Toss them gently with the lemon juice to prevent browning and set aside.
2. Mix the Dry Ingredients: In a large, heavy-bottomed pot, whisk together the granulated sugar, light brown sugar, Clearjel (or cornstarch), cinnamon, nutmeg, and cloves until fully combined.
3. Cook the Syrup: Gradually pour the apple juice (or water) into the pot, whisking constantly to prevent lumps. Bring the mixture to a boil over medium-high heat, stirring frequently. Once it boils, let it bubble for 1 minute until thick and clear, then stir in the vanilla extract.
4. Combine and Simmer: Gently fold the prepared apple chunks into the hot syrup. Turn the heat down to low, cover the pot, and let it simmer for about 5 to 8 minutes, just until the apples start to tenderize slightly but still hold their shape.

The Cheesy Topping:

• 1 cup Shredded mozzarella cheese

• 1/2 cup Cheddar cheese

• 1 Small onion, finely diced

• 2 cloves Garlic, minced

• 2 tbsp All-purpose flour

• 240ml (1 cup) Beef broth

• 120ml (½ cup) Heavy cream

• 150g (1½ cups) Shredded mozzarella cheese

• 1 tsp Italian seasoning

• ½ tsp Black pepper

• 1 tsp Salt (or to taste)

Optional Garnish:

• Fresh parsley, chopped

• Extra shredded cheese

Instructions

1. Prepare the Biscuit Cups: Preheat the oven to 190°C (375°F). Lightly grease a muffin tin. Press each biscuit dough piece into the muffin cups, shaping them into small bowls.
