Marlow’s Salmon. Bed of caramelized broccoli and buttery pearl cous cous. Medium-grilled salmon with toasted almonds, sweet red grapes, and plenty of rich red wine reduction.

This is one of those dishes that sound really weird until you take a bite. A modified menu item from Marlow’s Tavern, where I got my start, this was my favorite meal to heist home in a brown box.

Chocolate-Peanut Butter Pie. This rich pie filling is made with sweetened condensed milk and Reese’s Peanut butter. Graham cracker crusted, glazed on top with Hershey’s Chocolate, and drizzled with even more Reece’s. Lastly, a little fresh whipped cream never hurt anyone. A peanut butter candy lover’s dream!

In other words, my dream because I love peanut butter!

Asian-Style Stir Fry. Fresh carrots, bell peppers, and tender, flavorful beef. Later I added: broccoli, edamame, noodles, and shrimp. Bubbling in a rich sauce of pineapple juice, soy sauce, and sesame oil with garlic and ginger.

I don’t have a problem with inauthentic cuisine as long as it’s not pretending to be authentic. I’m not claiming this delicious Stir-Fry as something you would find in Asia but it is inspired by it’s ingredients and flavor profiles. Enjoy!

Happy Salad. Bleu Cheese and Blueberries. Butter lettuce mix, strawberries, radishes, cucumbers, crispy shallots, and chili oil. Doused in a white balsamic vinaigrette.

I’m supposed to say something personal here. That’s part of the post. But I can’t figure out what it should be about! I write my best when I’m in pain. Life is pretty good right now. Spring is here, nobody close has died, I’m not in the middle of a breakup, work is the normal amount of stressful, and my cat is chilling on the windowsill. I 100% believe that we can be okay no matter what situation we find ourselves in, however, boy does it help when life takes a chill pill for a second. Moments of peace and seconds of quiet. I guess you could say, I’m hAppY.

Strawberry-Churro-Basque Cheesecake. The most caramelized cheesecake engulfed in tantalizing cinnamon-sugar puff pastry. Topped with fresh and jammy strawberries.

People literally screamed in enjoyment when they tried this. For once I said, “Ten outta ten-no notes!”
when I tried it for myself.

Salmon Spaghetti Alfredo with Spinach. Creamy, cheesy, delectable.

There are no rules. Researching recipes online, I come across questions and comments sections with home cooks asking if they “Can”. “Can I substitute strawberries for blueberries?” “Can I use cream cheese instead of sour cream?” Of course we want our recipes to turn out perfect.
