Hey y’all! 👋🏼❤️
We’re Ashley and Ethan, and this food truck is a little more than just a business for us. It’s a piece of our family, our history, and a whole lot of hard work wrapped up into one little truck. ❤️
Hillbilly Slim’s comes from my Uncle Dwayne’s restaurant, and when the opportunity came for us to franchise a food truck, we honestly didn’t realize just how much it would mean to us. Looking back now, we think God may have known exactly what He was doing. 🙏🏼Hillbilly Slim's
My grandparents owned Master Chef, and so many of the recipes and memories we’re bringing along with us come from those days. And one of the biggest blessings of all? I still have my Granny Burlene working right beside me. 🥹❤️
We’re learning something new every single day, and let me tell y’all… we’ve learned REAL quick that there is a whole lot more that goes into running a food truck than just showing up and cooking! 😂🫠
But through the long days, the tired feet, the crazy busy days, and all the learning curves, we are so thankful.
Thank you to every single person who has stopped by, ordered food, shared a post, told a friend, encouraged us, or simply cheered us on. Y’all have welcomed our family and this little adventure with open arms, and we are so grateful. 🥰
Because we both work full-time jobs and have a 5-year-old and a 2-year-old at home, we’ve decided that for now, the food truck will be open Thursdays and Fridays 11-6. We’re trying to find that balance between our jobs, our babies, our family, and this little dream we’re building. ❤️

We'll be serving up our cashew chicken, cheese enchiladas with chili, chips and salsa, and tacos as à la carte item!
