mini pancakes menu is here!! 🩷🤸🥞🍓✨

when we launched the cart, we wanted something easy, grab-and-go, delicious… and of course super cute✨ so we created a few seasonal flavors that mighhttt just make their way onto our permanent menu at our express spot inside opening this summer 👀 so make sure you tell us your favs!

🥞 plain jane — topped with powdered sugar and syrup. Nothing plain about, just delicious.

🍓🍰 strawberries ‘n cream — topped with nilla and strawberry wafer, raspberry sauce and fresh strawberries.

🍪🤠 caramel cookie crunch — topped with crushed oreo, Nutella, lechera.

🍌💛 cinn-banana dream — topped with banana, caramel lechera, and Cinnamon Toast Crunch cereal.

This week has felt a little strange without seeing all of you… we missed you more than you know 🥺🩷

But we have some good news to share.

While we continue searching for our next home for the cafe, you’ll now be able to find us every weekend at the Winter Garden Farmers Market (Saturdays) and the Clermont Farmers Market (Sundays).

It may not be our little cafe on the corner, but it means the world to us that we still get to make your coffee, see your faces and keep up with our community while we figure out our next chapter.

Thank you for sticking with us through all of this.

We’ll be there with coffee, matcha, pastries… andddd more 👀

As we finish moving our things and wrapping up at the shop, we wanted to spend our last day on Plant Street with all of you 🥹

We’ll have our coffee cart out front tomorrow a.m from 9am–1pm with coffee and pastries and while it won’t be the full café experience, we’ll still be serving your favorite lattes and a fresh pastry drop by 🩷

We can’t wait to see you tomorrow!

Today was our last day at the café. There have been so many emotions throughout this entire journey that it’s hard to even put them into words: sadness that this chapter is coming to an end, anxiety about what comes next, but also so much hope because of the incredible community that has carried us through it all.

As many of you know, Three Birds has been everything to me. Knowing that tomorrow our customers won’t be able to pull on our door truly breaks me. 2 W Plant was a dream come true - a corner filled with sunlight that always seemed to give everyone this amazing glow. We always got comments saying it was “Three Birds that brought the glow,” and I hope that’s something we carry with us wherever we go next.

To this community, thank you will never feel like enough. You are the true definition of supporting small business. I still remember moving here and opening Melts on Main (the OGs will remember) and thinking “How will anyone even know we’re here?” But you did. You found us. And you supported us from day one.

I came here at 22 years old, and I’m leaving just shy of 30 and that alone makes this goodbye bittersweet. You’ve been with me through the early struggles of starting a business, through a pandemic, through the move to Plant Street, through building something truly special, and now through closing this chapter as we prepare for the next one.

I didn’t want this to be sappy… but I guess that’s part of a closing post.

While we are incredibly excited for the future, that excitement doesn’t take away from what we feel today: overwhelming gratitude (and lots of tears).

We know this isn’t the end, you’ll be seeing us again very soon.

Winter Garden, we want to thank you from the bottom of our hearts for the incredible outpouring of love and support during this transition. We could have never imagined such kindness from our neighbors, and seeing your faces and hearing the memories you’ve created at the café has meant so much to us.

During this difficult time, we also want to share something important. It has never been our intention to incite anger or direct negativity toward the city, our landlord, or any individual. Because of comments circulating that do not reflect our values or culture, we have made the decision to cancel tomorrow’s gathering. We will be open regular hours but we will not be hosting an event.

Three Birds has always stood for community, compassion, and love. Even in moments of heartbreak, we believe responding with kindness is the only way forward. We understand the frustration and sadness many of you feel, but we ask that this energy be transformed into something positive and that is continued support for small businesses and for the future of this community we all cherish.

While we may be saying goodbye to this space, we want to iterate that this is not the end of Three Birds. In the coming weeks, we will be sharing more about the Three Birds Express concept and the location we hope to open in mid-2026. Wherever we land next, our greatest hope is to carry this beautiful community with us.

Love will always be more powerful than hate. We are so grateful for every moment we have shared here and look forward to serving you through February 26th and into whatever comes next. See you soon.
