Catfish deserves a spot on your table this week. 🐟

Mild, sweet, and naturally tender, it takes on flavor beautifully. Cornmeal-crusted and pan-fried, blackened with a hot skillet and smoked paprika, or simmered in a rich tomato stew, it’s one of the most forgiving fish in the kitchen.

Our quick weeknight favorite:

1. Pat fillets dry, season with salt, pepper, and Cajun spice
2. Dredge in cornmeal
3. Pan-fry 3 to 4 minutes per side until golden
4. Finish with lemon and a side of hot sauce

Flounder - Stuffed!

Maud dropped by today for some beautiful Flounder, with plans to stuff it with the Oyster Rockefeller stuffing she had left over from her seafood birthday feast at the weekend. 😍

And the best bit? Every bit of seafood for the birthday celebrations came from us here at Zora's. ❤️

Now, here's where it gets interesting…

We have two master fishmongers at Zora's, Tee and Ryan, and two different approaches to preparing a whole Flounder for stuffing.

Fishmonger Tee created the perfect pocket, carefully removing the bones while leaving the body of the fish whole. This gives the stuffing a lovely enclosed space to cook in and helps hold in more of those wonderful juices and flavors.

Fishmonger Ryan took the more classic French approach, neatly removing the bones through a precise cut along the top of the fish. That exposed top should grill a little differently, allowing the edges and stuffing to catch more heat and develop a smokier, crisper finish.

Same Flounder. Same stuffing. Two master fishmongers. Two very different cuts, and potentially two quite different finished dishes.

It's remarkable how the way a fish is cut can guide the taste, texture and flavor of the final dish, even when everything else is exactly the same.

That's the craft of a great fishmonger. 🐟
