What started as one friend’s game-day breakfast tradition became a tradition for all of us.
For years, Brody would get out of school early with his father on game days to head over to Egg Crate. He’d always order pancakes to get himself carb’d up and ready to play at his best. He always told us, “The days I missed Egg Crate were just missed opportunities to be at my best.” And to him, it truly was the best breakfast spot around.
So one morning, we finally listened.
The entire drive there turned into a chant of “Egg Crate! Egg Crate!” like we were heading somewhere bigger than just breakfast. And in a way, we really were. When we finally pulled up, you could smell the bacon and fresh food before the door even opened. It already felt like the place lived up to the hype.
Then Brody stepped forward, opened the door, looked back at all of us, and said:
“The early bird gets the worm. The smarter bird gets Egg Crate.”
We all lost it laughing, but for some reason, it stuck.
From that day on, Egg Crate stopped being just a place to eat. It became a place where friends became family. A place where conversations lasted longer than meals, where birthdays were celebrated, and where ordinary mornings somehow became memories we’d carry for years.
No matter whose birthday it was, Ms. “Pancakes” made sure everyone knew by singing Happy Birthday loud enough to embarrass us all.
Today, some of us live in Texas. Some are in St. Louis. Others are spread across Kansas. Life has taken us in different directions, but one thing hasn’t changed:
Whenever we’re together, we find our way back to Egg Crate Cafe.
For years we joked about ending up on the wall someday. We never thought it would actually happen.
But standing there looking at that picture, we realized it wasn’t really about us.
It’s about what happens when a local restaurant becomes part of people’s lives. It’s about the friendships formed over coffee, the family breakfasts after church, the game-day traditions, the birthday celebrations, and the countless conversations that happen around a table.
The photo on the wall is just one story.
We know there are hundreds more.
