Meet Chef Partner José Soto, the force behind every plate at Tallo Restaurant & Bar. 🇵🇷 🇺🇸
Born in Las Piedras, Puerto Rico, Jose Soto is a self-taught chef with more than 20 years in kitchens across the island and the United States — American, Italian, Spanish, Latin, and Caribbean. Then he chose Wesley Chapel on purpose: a city still growing, where a different kind of restaurant could still belong to the people who live here.
The name itself was born after Hurricane María. Watching plants come back to life, he told his daughter Penelope he wanted to open a place built on everything he had learned. She named it Tallo — the stem that carries life from the roots to the fruit.
That is what he brought to : not another concept dropped into a plaza, but a restaurant that feels like yours. Churrasco with chimichurri and mamposteao. Mallorca brunch. Bold American comfort with Caribbean soul. A table where regulars are recognized and first-timers leave already planning the next visit.
