🍕 ASK THE PIZZAMAN — the ranch case.

Last week Thomas Harkness submitted a three-part legal brief on whether ranch belongs on pizza. Numbered points. Sub-clauses. A conditional based on how much you’ve had to drink. We’ve read shorter mortgage applications.

The Pizzaman has reviewed it. Here’s the ruling:

1. Cheese pizza — DENIED. You have a plain pizza and you’re trying to make it taste like a salad. Fix the pizza, not the dip. 🚫

2. Buffalo chicken — GRANTED. Thomas is right. That’s not ranch on pizza, that’s an ingredient that showed up late. Allowed. ✅

3. BLT pizza — GRANTED, ENTHUSIASTICALLY. It’s bacon, lettuce and tomato. What did you think was going on there, marinara? 🥓

On point 3 of the brief — “have we been drinking?” — the Pizzaman declines to answer. Some rulings are better left between a man and his Thursday. 🍺

Let’s talk about the BLT Pizza. 🥓🍕

Bacon. Lettuce. Tomato. On a pizza. Cold crisp lettuce on a hot crust — which sounds wrong until you eat it, and then it’s the only thing you want.

Lauren called it “amazing.” Thomas wrote a three-part legal analysis arguing ranch belongs on it. (He’s right. We’ll allow it.) 🥣

Most of Wesley Chapel still hasn’t tried this thing. That’s a problem we’d like to solve tonight.

🍕 ASK THE PIZZAMAN — first question from an actual customer, and it’s a good one.

“Why does margherita pizza taste best when it’s well done?” — Team DeRenzo, who’ve been eating here longer than some of you have lived in Wesley Chapel.

Pizzaman says:

Because margherita has nowhere to hide. 🤌

Three ingredients: sauce, fresh mozzarella, basil. No pepperoni covering for you. No sausage doing the heavy lifting.

That fresh mozzarella puts out water. Cook it soft and you get a wet pizza. Leave it in — let the crust char a little, let the water cook off, let the sauce concentrate and the edges blister — and the whole thing wakes up. Sweeter sauce. Crispier bottom. Cheese that browns instead of swims.

Well done isn’t burnt. Well done is finished. Most people pull it too early because they’re scared of a little color. Don’t be. 🔥

Ranch with pizza: crime against Italy, or genuinely great?

This started in our comments this week. Lauren says our ranch is the best thing going. Annemarie says she’d slap her husband for it. Both women are correct in their own way and we refuse to get in the middle of it.

The Pizzaman’s official position: misdemeanor, not a felony. He’ll bring it to your table. He’ll just look at you while he does. 😤
