Okay, this gloomy, rainy-looking Wednesday is NOT going to bring us down over here at The Green Table.

It’s Gyro Wednesday, but I’m adding a little something to the mix today.

Last week I made a Reuben using our 26Roots seitan slices and honestly shocked myself. I literally stood there eating it thinking, “Wait… why is this SO good?” Apparently some of y’all agreed, because you’ve already started ordering it that way.

So today, it’s officially invited to the party.

Ever heard of a Kapsalon? 👀🇳🇱

This legendary dish was created in 2003 in Rotterdam, The Netherlands by a Cape Verdean 🇨🇻 barber named Nataniël “Tati” Gomes. He would go to a local shawarma shop and ask them to combine all his favorite things into one tray—fries, meat, melted cheese, sauces, and salad. Eventually, other customers started ordering “what the guy from the hair salon (kapsalon) gets”… and just like that, the Kapsalon was born.

Fast forward to today—what started as a simple custom order is now one of the most popular fast food dishes in the Netherlands and has spread across Europe and beyond.

We took that concept and gave it a fully plant-based twist 🌱🔥
