The Foodtruck is open from 7am to 1:30 Unless it is raining. We serve Breakfast and lunch all 6.5 hours that we are open.

If it is raining make sure you call to see if the Foodtruck is open.
The wind tears up my windows. Also if the windows are closed I have also turned off my Ubereats customer app. There is nothing worse than being in that tin box during a storm.
We are open today Tuesday 5/19. The rain has been light on and off all morning and afternoon.

I had a very sweet visitor today at the Foodtruck. Her tiktok name is Alexa956sphynxland
She is the sweetest, social primate that I have ever met. I should have taken a picture of her.
I snagged a clip from her tiktok page.
She had a bacon breakfast Tacos ALL THE WAY!
I think I'm in love!!!

I ran out of propane in the Ole taco truck at 7:30 this morning. I had to close the window for 45 minutes :( so While picking that up I saw a wall of flavorings.
I was super excited.
I bought this for coffee. I have added 3 ounces to 10 ounces of coffee and
It seriously has no flavor.
:( Now I'm looking at the bottle thinking that was once 10.00. I will just stick with Torani brand.

I popped Jalapeno, Celery and some Cherry tomatoes tossed in dry Italian seasoning mix to dry 9hr 30min ago. The Freeze dryer has been actually drying for better 5 hours now that the freeze phase is over that took better than 4 hours.
What happens is that the shelving is now warm at 90F but the chamber itself is -15F below zero
So as the trays gentlyy melt the produce under a extreem vacume it causes the water content in the veggies to sublimate and the water will literally vaporize.
It is a very cool process.
I just wish it didn't take 48 hours to complete the process.

Brisket Tacos are back on the menu!
Today we have Brisket, Barbacoa, Chicken, Carnitas. As always t he meats are all smoked and served asada style.
