Tuesday night at Viaggio..

An evening centered around Tuscany, with wines from Castello di Volpaia and Castelprile thoughtfully paired alongside each course.

Good food, great wine, and a full room enjoying both.

Wagyu oxtail, seared, then braised low and slow for hours until completely tender. Ponzu and soy layered in, an expression of Wafu Italian roots.

Shredded and folded back into its braising liquid with foie gras butter, coating each piece of ricotta cavatelli.
