“This 42-year-old Adams Morgan restaurant served very traditional Japanese cuisine when Saied Azali first began working there as a server and manager. He and the restaurant’s accountant later bought the place, and over the years it has served Spanish tapas, functioned as a nightclub, and hosted DC’s first drag brunch, which continues today. More recently, it’s gained acclaim far beyond the neighborhood, thanks to chef Masako Morish*ta’s modern takes on Japanese comfort food, such as garlic edamame dumplings showered in Parmesan and shrimp-katsu burgers with egg salad.”

“Executive chef at Perry’s in Washington, D.C., Japanese-born Masako Morish*ta was named the James Beard Foundation’s Emerging Chef in 2024. Prior to becoming a chef, she was an NFL cheerleader for the Washington Commanders, serving as the first-ever captain born outside of the United States.

Though the two professions are quite different, Morish*ta says the lessons learned in her previous career translate to her work as a chef: “I learned how to stay focused, maintain endurance, work hard toward long-term goals, and, above all, how to lead a team. I’m deeply grateful for the experiences that made me stronger, more disciplined, and more resilient.” On busy weeknights, she turns to this favorite rice bowl with Japanese roots. “It’s the perfect all-in-one dish,” she says, “and most importantly, it’s delicious!””

The sun’s finally out, which means Happy Hour hits a little different on the rooftop ☀️

Start with Chef ’s Shrimp Katsu Burger: a deep-fried shrimp patty layered with togarashi tartar, lemon cabbage slaw, and cheddar on a potato bun.

The dish pulls inspiration from the shrimp burgers Chef Masako grew up eating in Japan, while also reflecting the playful, comfort-driven cooking style she learned from her family’s nearly 100-year-old restaurant in Kobe.

Grab a seat, order a cold drink, and let the sunshine do the rest.
