This is the breakfast you grew up with in Iran. First the bread. This is barbari, long and golden, covered in sesame. You tear it by hand. Then the cheese. Persian people call this Lighvan, a salty white cheese aged in brine. It is a little milder, softer, and creamier than Greek feta. Bulgarian-style feta is the common substitute. You put a walnut on the same bite. Then the greens. This plate is sabzi khordan: fresh basil, mint, oregano, parsley, cilantro, scallions, watercress, chives, and radishes. Cucumber, tomato, grapes. Nothing is dressed. Last, the tea. You pour it hot and dark into a clear glass. One sip. That is the whole morning.
