Lao Comfort Food: Thom Khem

Join Seng Luangrath on Sunday, September 27 for the 2nd class in our cooking series and discover the comforting flavors of Thom Khem, a beloved Lao braised pork dish.

Slow-simmered until perfectly tender, Thom Khem is a rich and savory dish infused with garlic, shallots, soy sauce, palm sugar, and warming spices. The balance of sweet, salty, and aromatic flavors makes it a staple of Lao home cooking, often enjoyed with a bowl of steamed sticky rice. We will also introduce the tofu alternative during class for non-meat eaters.

More than just a recipe, Thom Khem reflects the heart of Lao cuisine: simple ingredients transformed through time, patience, and tradition into something deeply comforting and unforgettable. 🍚

You’ll also learn to prepare pickles that pairs beautifully with Thom Khem, bringing together a complete Lao meal while Chef Seng shares family recipes, cooking techniques, and the cultural stories behind the dishes.

🍚 The Art of Khao: Nam Khao

Join Chef Seng for the first class on Sunday, August 30th in the cooking series and discover one of Laos’ most beloved dishes: Nam Khao.

Originating in Thadeua, Laos, Nam Khao is a crispy rice salad made with golden fried rice, fragrant herbs, scallions, peanuts, fermented pork (or traditional variations), fresh lime, and chilies.

Every bite is a perfect balance of crispy, tangy, savory, and aromatic flavors, a dish that beautifully represents the heart of Lao cuisine. More than just a recipe, Nam Khao tells the story of Lao ingenuity, transforming simple ingredients and in this case, leftover rice, into something extraordinary. 🍚

You’ll also learn to make Thum Mak Hoong, the iconic Lao green papaya salad. Bold, bright, and packed with layers of flavor, it’s the perfect pairing to enjoy alongside Nam Khao.

This hybrid class combines hands-on cooking with a guided demonstration by Chef Seng, who will share family recipes and techniques passed down through generations.
