At Uproot, Chef Aftab’s vision will place fresh, locally sourced ingredients at the center of the plate. Celebrating exceptional proteins while giving equal attention to bold flavors, colorful seasonal vegetables, and thoughtfully developed vegetarian & vegan-friendly choices. His experience working with small foragers and producers, designing seasonal menus and building efficient kitchen systems, will balance a menu that is both refined and approachable.
