We had the chance to welcome Pino Rogano to Montesacro to share his knowledge of salami making.

From pancetta tesa to capocollo to nduja and cacciatorini, he walked us through the process step by step, from selecting the cuts to seasoning and curing with care. Every detail matters. Every choice shapes the final result.

It was a reminder that great food begins long before it reaches the table.
